Crispy Baked Tofu


Before I went vegan, I thought tofu was the grossest thing ever. One of my favorite stories to tell people is my first date with my boyfriend. He wanted to take me to his favorite tofu restaurant (he’s not vegan, by the way). I tried to politely ask if we could just get pizza instead, but he insisted the place was special to him and he really wanted to take me there. I replied, “I really do not like tofu. It is disgusting.” He tried to ease my mind and said, “don’t worry, I promise you will like it.” Well we went on the date and I actually loved it. Now I am the one asking if we can go to that restaurant. The reason I am telling you this story is to open your horizons. Whether you are vegan or not, tofu is delicious. You just have to season it right. If you have never had tofu before I would highly recommend you try this recipe first. It is not only easy to make but will remind you a bit of a chicken nugget. You can dip it into some ketchup, barbecue sauce or even my vegan honey mustard. You can also toss it in a buffalo sauce, sweet chili sauce or teriyaki sauce. Either way this is a great introduction to tofu and you will love it.


4-5 oz firm or extra firm tofu
¼ cup panko breadcrumbs
1 tbsp garlic powder
2 tsp paprika
1 tbsp nutritional yeast
1-2 tsp salt


Press tofu by wrapping it in a paper towel or 2 and placing something heavy on it. Leave it on there for about 10-15 minutes. Cube tofu and place on baking sheet lined with parchment paper. Sprinkle on seasonings and breadcrumbs and lightly toss to coat tofu as evenly as possible. If you want you can lightly drizzle a tbsp of oil but you don’t need to. Then put in the oven at 400F and cook for about 20 mins. You know it’s done when the breadcrumbs don’t fall out and the tofu looks a little bit dry.
