Spanakopita pronounced spä-nə-ˈkō-pi-tə or we can just call it spinach pie. If you have never had spinach pie you are missing out. It is truly delicious.
It is actually not too hard to make and you can trick all your friends with the vegan version. Trust me they will think it is the real deal. Traditional spinach pie is made with feta, some variations have egg, some use a goat cheese or ricotta just depends on where your family came from and how they made it. PS I am not Greek, this was just what I gathered from my research.

16-20 sheets filo dough [frozen or fresh]
2 packages of frozen spinach thawed [20 oz]
5-6 oz firm tofu
2 tbsp red wine vinegar
1 tsp garlic powder, onion powder, salt
1/2 tsp oregano
4 oz vegan cream cheese
1/2 onion chopped
2 cloves garlic minced
A few hours before doing this recipe thaw your frozen spinach. When you are starting to cook, begin by finely chopping up onion and mincing garlic. Put 1 tsp of oil into a pan and sauté onions and garlic. While that cooks prepare your tofu feta. Press the tofu first by wrapping it in paper towel and placing something heavy on it for 5-10 mins. Then crumble the tofu into a bowl, squeeze on lemon, add apple cider vinegar, garlic powder, onion powder, salt and oregano. Mix all together and set it aside. This can be made ahead of time. Take thawed frozen spinach and begin to press all the water out of it. I used a nut milk bag to do this but you can use a cheesecloth too. You want to get as much water out as possible. Once the water is out place spinach in a bowl. Add in sautéed garlic and onions, vegan cream cheese and tofu feta. Mix together until well incorporated. Now move on to the layering of the filo dough. Take a pan a 9×9 or 8×8 square works best and using a silicon brush, brush olive oil on the bottom. Then take your first sheet of filo dough place it down and brush oil on top. Repeat 8-10 times. You want to oil the sheets really well because they dry out when they hit air. Pour spinach filling it and spread evenly. Fold up sides of filo dough and brush edges with more oil. Then place another 8-10 filo dough sheets on top repeating the same process as before. Give it one more good coat of oil and bake at 375F until golden brown.
Depending on how small you cut it can get 9-12 pieces.
