Vegan Lunch Box Ideas

I always brought lunch to school. I was the kid who brought a salad or a panini and I loved it.I know some people don’t like to bring lunch because they don’t have time. These three ideas are super easy though and definitely meal-prepable. My lunch boxes are from a company called Sistema [not sponsored]. I bought them when I was in grad school, they are pretty affordable and BPA free.

LUNCH BOX IDEA #1: Pasta salad box [pictured above]

PASTA SALAD
6-8 oz pasta of your choice
1/2 bell pepper
1/2 cucumber
1/2 can kidney beans and chickpeas
10 olives
2 tbsp red wine vinegar
1 tsp olive oil
2 tbsp balsamic glaze
1 tsp vegan parm

Cook your pasta, I choose gluten free brown rice. Chop up bell pepper, cucumber and olives. Wash the chickpeas and kidney beans. Once the pasta is cooked, drain and put into a bowl. Place all veggies and beans in a bowl and toss. Mix together red wine vinegar, olive oil, balsamic glaze and vegan parm in separate container. You can either toss it into pasta salad OR leave it aside and bring it each day and shake it on before you eat.

Paired with champagne grapes and some popcorn.

LUNCH BOX IDEA #2: Breakfast for lunch box

GLUTEN FREE PANCAKES
1/2 cup gluten free oats
1/2 ripe banana
2/3 cup plant milk
2 tsp coconut sugar
1 tsp baking powder

Place all ingredients into a blender and blend until smooth batter forms. In a non stick pan on medium heat add in small amounts of batter to make mini pancakes. Cook until bubbles form and then flip. Will get about 12 mini pancakes. Serve with blueberries, strawberries and good quality maple syrup.

TOFU SCRAMBLE
3 oz firm tofu
1 tbsp nutritional yeast
1 tsp salt
Handful of spinach
1/2 tsp paprika
1/8 cup vegan cheese

Crumble tofu in a pan on medium heat. Cook until it turns golden brown. Then add in nutritional yeast, salt and paprika. Once the spices coat the tofu, add in spinach and vegan cheese.

LUNCH BOX IDEA #3: Quesadilla box

BEAN, CHEESE, RICE QUESADILLA
1/2 can black beans
1/2 cup rice of your choice
1/4 cup vegan cheese
1 tortilla

Microwave black beans for 45 seconds to get soft, so you can mash and make a spread. I like to use Trader Joes frozen jasmine rice because you cook it in the microwave for a minute and it’s done. Spread the mashed black beans onto half of a tortilla. Add rice and cheese, and fold in half. Place into a pan for a few mins until cheese is melted and tortilla is golden. If you make this ahead of time, microwave the quesdillas in the morning and wrap them in foil to keep warm. Pair with cucumbers and bell pepper.

BROWNIE BALL BITES
10 pitted dates
1-2 tbsp cacao
1/2 cup cashews
1/4 cup coconut flakes
1 tbsp water

Place all ingredients into a food processor or blender. Blend until a ball forms, adding more water if the mixture seems too dry. Roll into small balls and freeze until ready to eat. You will get about 15 brownies.
