Healthy Breakfast Meal Prep Ideas

IMG_8299.JPGI have already told you guys, I am not a breakfast person. But I know it is important to start the day with something good and healthy.These two ideas are perfect for meal prepping, easy to make and great to store. They are also healthy and around 450 calories. So really a perfect way to start the day!

APPLE PIE OVERNIGHT OATS

Ingredients
3/4 cup oats
1 tbsp chia seeds
1 apple
1/4-1/2 cup water
3/4 cup almond milk
2 tsp cinnamon
2 tsp coconut sugar [this is not very sweet, if you want it to be sweeter add in more sugar]

Recipe
Chop up your apple and put it into a pot. Put in water, 1 tsp cinnamon and 1 1/2 tsp coconut sugar. Cook apples on medium heat until soft and liquid is dissolved. Start with 1/4 cup of water if it needs to be cooked more add in the other 1/4 cup. In a jar add in chia seeds, oats, almond milk, 1 tsp cinnamon and 1/2 tsp coconut sugar. Cover with a lid and shake until everything is mixed together. Place in fridge overnight, store cooked apples separately and enjoy together the next day. Can be eaten cold or hot.

IMG_8296.JPGSPINACH PESTO TOFU BURRITO

Ingredients
4-5 oz extra firm tofu
10 basil leaves
1 cup spinach
2 tsp salt
2 tsp garlic powder
1 tbsp nutritional yeast
2 tbsp water
1 tsp tahini
1/2 tomato chopped
1 oz vegan cheese
1 tortilla

Recipe
Crumble tofu and cook in a pan on medium heat until it turns golden. Add 1 tsp garlic powder and 1 tsp salt to flavor. In a blender add in spinach, basil, 1 tsp salt, 1 tsp garlic powder, tahini, nutritional yeast and water. Blend until mixed. Once tofu is cooked, mix together with spinach pesto. Wrap mixture in a tortilla, add tomatoes and vegan cheese. Cook in a pan until both sides are crispy. To store in the fridge wrap in foil or cling wrap. Heat up in microwave or in a pan on the stove.

Both recipes yield one serving.
