Pumpkin Protein Mac and Cheese

Wouldn’t it be the dream if mac and cheese could be full of protein, vitamins and healthy? Well now it can be.

This mac and cheese is perfect for the fall time because it is warm, comforting and features everyone’s favorite ingredient PUMPKIN! The real reason this mac and cheese is so good for you though is because of the pumpkin seed protein powder. This powder is from a company called OMG! You can check their website out right here. I love the pumpkin seed protein powder because it is vegan, contains only the ground up seeds and has a very mild flavor. So it would work great in sweet recipes but also work well in savory dishes like this one. I think it is a nice way to up your protein game with a natural source of protein! Also, even though it is green as you can see it did not make my sauce appear green at all which I like as well.

1 1/2 cups almond milk
1 tbsp nutritional yeast
2 tbsp OMG! pumpkin seed protein powder
1/2 tsp paprika
5 tbsp pumpkin puree
1 cup shredded vegan cheese (I like to mix cheddar and mozzarella)
1 tsp garlic powder
Salt and pepper to taste
Pasta of choice (I used pipe rigate)

Boil pasta to al dente you can use about 3/4 of the box or just the use whole thing if you’d like. Then in a separate sauce pan add in milk, nutritional yeast, pumpkin seed protein power, paprika, garlic powder, and pumpkin puree. Whisk together until everything is mixed and there are no clumps. Then add in the cheese and continue to whisk until cheese is melted and sauce is thick. Add in cooked pasta and toss until well coated. Add salt and pepper to taste. Optional to top with parsley, paprika, panko bread crumbs and more vegan cheese.

Serves 3-5 people
