Aglio e olio means garlic and oil in Italian. One of the most simple but delicious ways to make your pasta.The addition of some red chili peppers, fried kale and a squeeze of lemon brings this simple dish to a new level. Serve it in a pretty dish, sprinkle some vegan parm on top and everyone will think you are a gourmet chef!
Ingredients
3-4 tbsp olive oil
2-4 cloves of garlic (depending on how garlicky you like things)
3 giant handfuls of kale
1/2 tsp red pepper flakes
1 lemon wedge
1/2 bag of pasta of choice
Salt to taste
Method
In a sauce pan add in 3 tablespoons of olive oil, heat up on medium heat. Once the oil is warm add in red pepper flakes. Slice garlic thin and then add in. Mix around and add in kale. Cook until crispy. First it will wilt then cook it more and it will turn crispy. If a lot of the oil was soaked up by the kale add in another tablespoon. Then add in your cooked pasta and toss. Sprinkle a little salt and if you want it spicier extra red pepper flakes. Serve into bowls and squirt lemon juice on top. You can also top with nutritional yeast or vegan parmesan cheese.
