7 Ingredient Vegan Meals

IMG_2665.JPGIf you are someone who doesn’t entirely love cooking or long, complicated recipes this one’s for you. All these recipes have less than 7 ingredients and take no more than 15 minutes to make. Vegan mac and cheese, kale and cheese pizza and bean salad toast. All the delicious flavors you would want in half the time.

VEGAN MAC AND CHEESE
Ingredients
6 oz pasta [170g]
1/3 cup starchy water
2 tbsp nutritional yeast [10g]
1/2 tsp salt [3g]
1/4 tsp garlic powder
1/4 tsp paprika
1/2 tbsp vegan butter [7g]
Optional: top with breadcrumbs

Method
First begin by cooking your pasta of choice in salted water. After the pasta is almost done cooking take out about 1/3 of a cup of the water and set it aside. The starchy water helps to form and thicken a sauce. Once the pasta is done cooking, strain and add in nutritional yeast, salt, garlic powder, paprika and vegan butter. I like to add in the starchy water 2 tsp at a time just to make sure I don’t add in too much water. However, I do usually end up using the whole 1/3 cup. Stir the pasta and mix together until a cheesy sauce is formed.

Serves 1-2

KALE AND CHEESE PIZZA
Ingredients
1 tortilla
1-2 handfuls of kale
1 tsp olive oil
1/4 tsp garlic powder
1/4 tsp salt
Vegan mozzarella to sprinkle, as much as you would like
Optional: top with red pepper flakes

Method
Preheat oven to 450F (232 C) In a pan add some water and cook kale for 5 minutes. I like to cover it so it seems a bit. You just want to soften the kale. Mix the olive oil, garlic powder and salt together. Spread about 1/2 of it onto the tortilla. If you want, add another sprinkle of garlic powder  but that’s totally optional. Then sprinkle on some vegan cheese and your kale. I like to do some cheese on the bottom then the kale and then more cheese on top. You can add a little more garlic powder again if you want. Then place in the oven and cook for about 8-10 minutes. Until the tortilla is a bit golden and cheese is melted. Once it is out of the oven, drizzle the rest of the olive oil on top and sprinkle some red pepper flakes.

BEAN SALAD TOAST [inspired by my friend Anna Pelzer]
Ingredients
1 can of kidney beans
1 can of white beans
3 baby bell peppers or 1 regular pepper chopped
1/2 cucumber chopped
1/3 cup red wine vinegar
2 tbsp balsamic vinegar
1/4 tsp salt
Bread of choice

Method
Rinse and drain your beans. Then chop up your peppers and cucumbers. Place all the veggies in a bowl, add the vinegars and salt. Mix it all together. Toast some bread and pile on the bean salad. The longer the beans salad sits in the vinegar the more flavorful it will be.

Bean salad serves 3-4
