Vegan Banana Walnut Muffins

banana walnut muffins 2.pngThis is one of my mom’s favorite muffins. I remember being little, we would get bagels on the weekend and she always got a banana walnut muffin. So I knew had to make a good muffin that was approved by my non vegan mother. This one was approved! Just like with the Blueberry Muffins it is not an overly sweet muffin. I am not into that so if you like super sweet muffins add in some more sugar. Either way this are delicious and a perfect way to start your morning!


You can use any type of flour you like. I just use whole wheat because it makes the muffin a bit nuttier. If you use oat flour to make it gluten free you may need to use more almond milk. You can also use any type of milk you like I just prefer almond milk. Same with sugar as well, I prefer coconut sugar but use any type you like!

2 cups whole wheat flour [240g]
2 tbsp flax seed meal [13g]
5 tbsp water
2 tsp baking powder [10g]
1 cup almond milk [240 mL]
1 tsp apple cider vinegar
2/3 cup coconut sugar [75g]
2 very ripe bananas, mashed
1 tsp vanilla extract
1/4 tsp cinnamon
1/2 cup walnuts [60g]

1/4 cup walnuts, chopped [30g]
1 tsp coconut sugar [4g]

Preheat oven to 400F or 200C. First, make vegan buttermilk by mixing 1 cup of almond milk with 1 tsp of apple cider vinegar. Mix and set to the side for 5 minutes to curdle. Then make your flax egg by mixing 2 tbsp of ground flax seed with 5 tbsp of water. Mix and set to the side to thicken. In a bowl add all your dry ingredients: flour, baking powder, cinnamon and coconut sugar. Mix to incorporate all together. Then add in the wet ingredients: flax eggs, buttermilk, vanilla extract and mashed bananas. Continue to mix all the ingredients together. Then gently fold in 1/2 cup of walnuts. Get a muffin tin and either line it with cupcake liners or spray with nonstick spray.  Then spoon in about 1/4 of batter to each tin. I fill mine up all the way to the top so that way they get very big and dome-like on top. Finally, sprinkle them on top with some extra walnuts and coconut sugar. Bake in the oven for about 20 minutes. Check on them halfway through to see how they are cooking, everyone’s oven runs a bit differently. To make sure they are done stick a toothpick in and it will come out clean. Let them cool for 10 minutes and enjoy!

Will make 10-12 muffins depending on how much batter you use per muffin.
