Sweet Potato, Quinoa and Refried Bean Taquitos

I have only had taquitos a few times before going vegan. They are typically deep fried and filled with some sort of meat and cheese. But these ones are gluten free, baked, healthy, can be made oil free and of course vegan.


I collaborated with Right Foods to bring you this delicious recipe. I love their products because they are quick to make but super healthy. Just look at the ingredients in the Sweet Potato Quinoa Kale Salad: organic quinoa, organic sweet potato, dehydrated vegetables (onion, shallot, kale), organic apples, organic cane sugar, sea salt, lime juice powder and spices.

These taquitos are so delicious. The sweet potato and refried beans work so well together. The quinoa adds nuttiness and protein. The crunchy corn tortilla is the perfect vessel for dipping. I mean seriously they are so delicious and would be perfect a party! They are also great as a healthy snack filled with protein, tons of vitamins and fiber.

Ingredients
2 packages of Right Foods Sweet Potato Quinoa Kale Salad
3/4 cup refried beans
1 tsp chili powder
2 oz vegan cheese, shredded (optional) OR 1 tbsp nutritional yeast
15 corn tortillas

Method
Preheat oven to 400F. First, begin by making the two packages of Right Foods Sweet Potato Quinoa Kale Salad. Just simply follow the directions on the back. Then in a bowl combine the prepared quinoa salad, refried beans, chili powder and vegan cheese or nutritional yeast. Mix together and that is your filling.

Take one tortilla and one big spoonful of the mixture. Place it to one side of the tortilla and form it into a log shape to match the length of the tortilla. Finally, roll it up and place on a baking sheet lined with parchment paper. If it unrolls just place a toothpick in the middle. Roll up the rest of them. You don’t want to overfill them, too much filling may cause them to rip. You can line them up in the pan, it is okay if they are touching. This is optional but you can lightly brush them with oil if you like. Then bake them for 25-30 minutes or until they are golden and crispy. It just depends on your oven. I think these would also work great in an air fryer.

Then you can serve this with homemade guacamole, hot sauce, homemade vegan sour cream, salsa or anything you like!
