I know, I know. You are probably thinking overnight oats, really? But just trust me these ones are so summery and full of tropical flavors you are going to love them. I prefer overnight oats to regular oats because they are creamier and just better in my opinion.
Overnight oats are great because they are so easy to make and they are perfect for meal prep. To ensure I got a good coconut flavor I used an almond coconut milk blend but you can use all coconut milk if you like too. Whatever you have accessible to you. The recipe is not super sweet so if you are looking for something very sweet I would double the amount of sugar.
1 cup of rolled oats
3/4 cup almond coconut milk
1 tbsp coconut sugar
1 tsp vanilla extract
1/4 cup coconut shreds
Fruit of choice and coconut chips for topping
- Place all ingredients into a jar.
- Shake them up and refrigerate overnight or until ready to eat.
- Once ready you can top with fruit and coconut chips.
Makes 1-2 servings depending on how much fruit you put with it.
