Healthy Veggie Lo Mein

Healthy comfort food is what I am all about these days. With this recipe you will be satisfied, happy and healthy. This recipe is also gluten free thanks to Right Food’s Sesame Chicken Noodles. 

I teamed up with one of my favorites, Right Foods, for this recipe! I think you know by now how much I love their. products. Healthy, vegan, packaging made with sustainable ingredients what more could a girl want? This recipe is so easy to make you will be eating it within 15 minutes! Perfect for a cold fall night.

INGREDIENTS

Lo Mein
1/2 cup water
1 cup kale, chopped
1 bell pepper, julienned
1/2 cup shredded carrots
1/2 cup shredded cabbage
5 stalks broccolini or 1/2 cup broccoli florets
1/2 shallot, chopped
Sauce
3-4 tbsp soy sauce
1 tbsp rice wine vinegar
1/2 tbsp maple syrup
2 tbsp water

METHOD

  1. Pour the contents of the sesame chicken containers into a pot. Add 1/4 cup of water and 1 package of flavoring. Save the other to use in future soups!
  2. Cook noodles on low heat until they have softened. It should only take about 5 minutes.
  3. Prepare veggies and add them all into a pan with 1/4 cup of water. Cook on medium heat until the vegetables have softened and are cooked. About 5-7 minutes of cooking.
  4. Once veggies and noodles are done. Add them into the same pan.
  5. Add the sauce ingredients and toss around. Cook for 2-3 minutes. This will help sauce to thicken a bit.
  6. Garnish with green onion and sesame seeds if you like and enjoy.
