Time to add another veganized fast food recreation to the list: the McGriddle! Another fast food thing I have never had but I think I did a pretty good job replicating. This is made with fluffy buttermilk pancakes infused with maple syrup, chickpea flour “egg”, lentil and oat “sausage” patty and a slice of vegan cheese.

Tofu scramble quickly became one of my favorite breakfasts when I went vegan. I did actually really enjoy eggs prior to going vegan so having this substitute is really nice. I tried many recipes and spent many times experimenting to get, what I think, is the perfect tofu scramble recipe.

Have you guys had polenta before? Not only is it delicious, it’s easy to make and gluten free! There are two kinds of polenta the pre-cooked one that comes in a cylinder and the actual grain. For this recipe you need the grainy, boil on the stove version. Cooking polenta is very easy so don’t be intimidated if you haven’t made it before.
