It is definitely no secret that I love mac and cheese. So I thought it would only be appropriate to do a mac and cheese inspired by the flavors of fall. I sat down and made my list and came up with a few flavors: butternut squash, apple and sage. I paired it with the savory flavors of vegan cheddar and smoky tofu bacon and we have one amazing dish.

I love mac and cheese. If I could eat it daily, I would. Vegan mac and cheese is so good because it doesn’t leave you feeling heavy and bloated like regular mac and cheese. While this one isn’t the healthiest rendition of mac and cheese it sure is delicious!

I love macaroni and cheese. When I first went vegan I followed the recipes that contained potatoes and carrots. I mean I even have two recipes, one made from cauliflower and one made from potatoes and cashews. Those are good don’t get me wrong but we can do better. If you are looking for restaurant quality, creamy, gooey mac and cheese then this one is for you. When you make this one you are never going to want to eat mac and cheese anywhere else, trust me.
