I am a big fan of cornbread. I always love when you go a restaurant and they bring you cornbread muffins. So I have been seeing so many people asking for a cornbread casserole, cornbread pudding and I had no idea what it was. Now I know why everyone wanted it. This thing is amazing.

Shepherd’s pie is truly a perfect comfort food dish. While the original is made with ground lamb or meat it is easily veganized by subbing the meat out for lentils! If you have never had Shepherd’s pie it is just a meat and vegetable filling with a layer of mashed potatoes. It almost reminds me of a chicken or beef pot pie but with mashed potatoes instead of pie crust.

My first vegan Thanksgiving I bought these Gardein breaded “turkey” cutlets with a gravy. To be honest it was oily and reminded me more of a chicken cutlet. It wasn’t bad but not great either. So I was inspired to try and make my own take on something similar and it was amazing.
