Ginger Peach Green Tea

A delicious iced green tea that is made with ginger simple syrup, mint and filled with pieces of peach. Perfect for hot summer days.

Ingredients
  

Ginger Simple Syrup

  • 1 large thumb ginger peeled and sliced (about 1 ounce/30g)
  • ¼ cup (60ml) maple syrup
  • 2 tablespoons (30ml) water

Green Tea

  • 8 cups (1920ml) hot water
  • 3 bags peach green tea

Other

  • 10 leaves fresh mint
  • ½ peach chopped (about 2 ounces/55g)
  • Ice to preference

Instructions
 

  • In a small pot add the ingredients for the ginger simple syrup. Mix together. Allow them to come to a simmer over low heat, once simmering continue to let it simmer for 5 to 7 minutes. It will be bubbly and thickened. Turn off and remove the ginger pieces, set aside and save for later.
  • In a large heat resistant pitcher add the water, tea bags, and simple syrup. Mix with a large spoon. Let tea steep for 3 to 5 minutes and then remove the bags, until it is golden color.
  • Allow tea to cool down, I like to start to add ice cubes in now to help speed the process up. Once it is room temperature add in the ginger, chopped peach, and fresh mint.
  • Now, you can continue to add ice cubes until it is cold or you can place in the fridge until ready to serve.
  • Add ice cubes into a glass, pour in tea then scoop in a few pieces of peach and ginger.

Notes

  • Please make sure whatever you pour hot liquid into is heat resistant. I learned my pitcher was not meant for hot liquids...
  • The longer the tea sits the more the flavor will develop if you want to serve this for guests make ahead day or night before.
  • The ginger simple syrup flavor is light once you add it into the tea. If you desire a strong flavor feel free to double or triple it.
