Crumble the tofu into small pieces with your hands. You do not need to press the tofu. Add the seasoning and mix together.
Take one tortilla and add a 2 large spoonfuls of beans. Spread with the back of your spoon. Add a sprinkle of vegan cheese, and a few spoonfuls of the seasoned tofu.
Repeat until all are made.
Generously, spray with spray oil and then place on a baking sheet.
Bake for 15 minutes, then carefully flip and bake for another 3 to 5 minutes until crispy or golden.
Meanwhile, prepare the pico de gallo by chopping all the ingredients and mixing together.
Once the quesadillas are done, cut in half and then serve with pico de gallo. Add any additional toppings, like green onion or cilantro.

Please note I am not claiming these are authentic quesadillas or pico de gallo recipes, they are inspired by Mexican cuisine.
In the pico de gallo, I used lemon juice because I did not have limes.
The pico de gallo is spicy if you want it to be less spicy use less jalapeño.
Feel free to serve with guacamole, vegan sour cream, or anything else you like.
To reheat either place in microwave, pan, oven or air fryer.
