Easy Vegan Fish Tacos

These easy vegan fish tacos are the ultimate summer meal! Completely gluten free and so quick to make. Perfect with a margarita.

Ingredients
  

Vegan Fish

  • 1 can heart of palms (14.1 ounces/400g)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • 1 teaspoon paprika
  • ½ teaspoon adobo
  • teaspoon black pepper

Cabbage Slaw

  • 5 ounces (150g) chopped green or Napa cabbage
  • ¼ cup (50g) pickled red onions or just thinly sliced red onion
  • 1 lime juiced
  • Salt to taste

Other

  • ½ cup (85g) frozen or fresh corn
  • 2 green onions chopped
  • 1 jalapeño or green pepper chopped
  • 2 tablespoons (30g) vegan sour cream
  • 5 corn tortillas

Instructions
 

  • Preheat oven to 400°F (206°C).
  • 2.Drain the heart of palm from the liquid in the can. There should be 5 whole hearts of palm. Cut them in half lengthwise so you have 10 long strips/
  • In a large dish add all the seasonings and mix together. Roll the heart of palm in them and coat it evenly.
  • Place onto a baking dish, spray with spray oil and bake in oven for 20 minutes.
  • While it bakes add the corn into a pan. Cook over medium low heat for 5 to 10 minutes until crispy and browned. If you like you can add a bit of spray oil or 1 teaspoon olive oil or vegan butter.
  • To prepare the cabbage slaw add all ingredients into a large bowl and mix together set aside.
  • Once the heart of palm are done cooking, flip, and place back in oven for 5 minutes.
  • If you would like to be able to drizzle the vegan sour cream mix it with 1 ½ tablespoons (22ml) water. This will make it easy to drizzle.
  • Once you are ready to make the tacos microwave the tortillas for 30 seconds or until soft.
  • Prepare tacos by adding the cabbage slaw, two pieces of hearts of palm, a few spoonfuls of corn, sprinkle some pepper and green onions on top, and finally drizzle the vegan sour cream over it. Repeat until all are made and enjoy.

  • 1 red onion (8 ounces/227g), thinly sliced
  • ¼ cup (60ml) apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon salt
  • 1 cup (240ml) water
