Homemade Cinnamon Toast Crunch

These homemade cinnamon toast crunch are only a few ingredients, fully vegan, and perfect for anyone who grew up loving this iconic cereal.

Ingredients
  

  • 2 cups (240g) all purpose flour
  • 1 cup (224g) vegan butter, cold and cubed
  • 1 teaspoon vanilla extract
  • 2 tablespoons (30ml) cold water
  • ½ cup (100g) organic sugar
  • 1 tablespoon ground cinnamon
  • Spray oil

Instructions
 

  • Preheat oven to 350°F (176°C).
  • In a food processor add the flour, vegan butter, water, vanilla extract, and 1 teaspoon of the cinnamon sugar or cinnadust. Pulse in 30 seconds to start to combine everything. Scrape down the sides as necessary until it forms a dough.
  • Knead with your hands into a ball if you need to add in more flour that is okay. Shape into a ball and chill in the fridge for 15 minutes.
  • I like to cut the dough in half and work with one half a time. Keep the one half in the fridge. Place the piece of dough between 2 pieces of parchment paper or my preferred way is a silicone baking mat on the bottom and parchment paper over top. Use a rolling pin to roll the dough out to be about ¼ inch thick. Roll it out into a large rectangle. You can use a knife to cut off uneven ends to make it into an even line. Lightly spray with spray oil and then generously sprinkle with Cinnadust or cinnamon sugar.
  • Use a pizza cutter or a knife to make even rows and columns to make squares. You can make these as big or small as you desire. I would say to make them at least 1 inch by 1 inch squares. Place them on a lined baking sheet or a good non-stick baking sheet. If you need help getting the pieces up use a knife to slide underneath them. Repeat the process with the scraps of dough and remaining dough half.
  • Once they are all made bake in the oven for 12 minutes or until golden and crispy.
  • Allow them to cool for 10 minutes before eating as they will harden. Add more spray oil and sprinkle with more cinnamon sugar or Cinnadust so they are coated very well.
  • Enjoy immediately on their own or with a bowl of non-dairy milk. Don't forget to slurp up the leftover cinnamony-milk.

Notes

  • To make the cinnamon sugar just combine the ground cinnamon and sugar in a bowl. I used the Cinnadust or you can just make your own cinnamon sugar according to ingredients.
  • If you want the cinnamon toast crunch to be very sweet you can add an extra 3 tablespoons of sugar into your dough.
