An easy and delicious air fried recipe that is perfect as a snack, appetizer or side dish. Mini flour tortillas are filled with refried beans and a veggie mixture and then dipped in a adobo cashew dip.
½cup(120ml) nondairy milk, unsweetened and unflavored
⅛teaspoonsaltor to taste
½teaspoonadobo seasoning
1teaspoonnutritional yeast
Other
parsley or cilantrofor garnish
2-3green onionchopped, for garnish
Instructions
Boil cashews for 30 minutes or soak overnight prior to starting this recipe.
In a large pan coat with spray oil (or use 1 teaspoon of olive oil) and add in the chopped jalapeño, zucchini, garlic, onion, and frozen corn. Add salt and pepper and saute over medium heat for 5 minutes until the onions and garlic are fragrant.
Meanwhile, in a medium bowl combine the refried beans and adobo seasoning.
Take one tortilla and place about 2 large spoonfuls of the refried beans on top. Spread it around with the back of spoon and then place about 2 to 3 small spoonfuls of the vegetables. Roll it up tightly and set to the side. Repeat until all are made.
Spray them with spray oil and then top with the chili powder.
Place in the air fryer basket and air fry at 375°F (190°C) for 13 minutes or until crispy.
Meanwhile, in a blender combine the cashews and seasonings for the sauce. Blend until smooth. Taste and add more salt if desired.
Once the flatuas are done, add to a plate with the dip and the parsley and green onion.

All air fryers cook differently adjust accordingly to your air fryer.
These can be baked, I would suggest starting at 375°F (190°C) for 15 minutes and going from there.
These can be deep fried, place into oil and fry for about 3 to 5 minutes until crispy and golden.
To freeze after making: place in the freezer and freeze for 1 hour, once they have hardened place in a storage container. To reheat simply place in oven or air fryer.
Lasts up to 3 days in the fridge, but they will soften as they sit there.
