Cut the tofu into 8 long rectangles. In a large plate combine the nutritional yeast, cornstarch, salt, and paprika. Mix together and coat the tofu pieces evenly in the breading. Place on a baking sheet. Spray with spray oil if you like.
Bake for 20 minutes, flip, and bake for 5 until golden and crispy. If you would like to air fry these you can too.
Make the dressing by adding all the ingredients into a small bowl or pitcher. Mix until well combined. Taste and adjust any seasonings.
In a large bowl combine the chopped lettuce, vegan parmesan cheese, and half of the dressing toss to coat evenly.
Once the tofu is done it is time to assemble the wraps. Add half of the salad to a wrap, 4 pieces of tofu, and drizzle some extra dressing over top. Roll wrap up, repeat with the other, and enjoy. If you want to grill the wrap you can do that as well.
