looking for the ultimate lunch? make this vegan chicken Caesar wrap! filled with crispy baked tofu, romaine lettuce, vegan parmesan, and a nut free Caesar dressing.

I have fond memories of growing up, going to the deli, and getting a Caesar wrap. They were always so good and the best lunch. This vegan chicken Caesar wrap is just as good if not better. They are easy to make and if you don’t want to put it in a wrap just add some vegan-friendly croutons and you’ve got a Caesar salad.

Nut-Free Caesar Dressing
There are quite a few ways to make a vegan Caesar dressing. My favorite way has always been to use tahini. My favorite tahini is Soom, it is runny and has great flavor. It creates a nice creamy base and makes the vegan Caesar dressing come together in just a few minutes. It has nutritional yeast, apple cider vinegar, seasonings, and a little water. There you go the easiest vegan Caesar dressing you could ask for. If you want to add in some extra things like a little vegan mayo, caper juice, or even dijon mustard you definitely can.

Wrap Choice
I actually love to use a lavash wrap because they are so large and make it easier for wrapping. If you want to use a flour tortilla or a gluten free tortilla you can do that of course. The Joseph’s Lavash Wraps are my favorite, they also offer some extra plant protein which I love. Crispy Baked Tofu “Chicken”
Extra firm or super firm tofu work wonderfully in this recipe to create a vegan chicken! The tofu is cut into small rectangles and coated in a mix of cornstarch, nutritional yeast, and seasonings. Sprayed with a little spray oil and then baked until crispy and perfect.

Vegan Chicken Caesar Wraps FAQ
- How long do these last? It is best to make and eat these fresh. However, I ate one the next day and it was still good a little soggy though.
- What else could I add to this? Chickpeas (even better if they were crispy), avocado, chopped vegan bacon or croutons.
- How could I meal prep this? You can make all the components separately. Bake the tofu, make the dressing, chop the lettuce and store in containers. Then when you want a wrap simply make it.
- Is this gluten free? As long as you use a gluten free wrap, yes.
- What could I swap the tofu for? Seitan or tempeh.

Vegan Chicken Caesar Wrap
Ingredients
Caesar Salad
- 1 head romaine lettuce chopped (about 6 ounces/175g)
- ¼ cup (28g) vegan parmesan cheese
Tofu
- ½ block (8 ounces/224g) extra firm tofu
- 2 tablespoons nutritional yeast
- 2 tablespoons cornstarch
- 1 teaspoon salt
- ½ teaspoon paprika
Dressing
- 2 tablespoons (28g) tahini
- 3 tablespoons (45ml) water
- 1 teaspoon apple cider vinegar
- ½ teaspoon onion powder
- 1 teaspoon nutritional yeast
- ½ teaspoon garlic powder
- ⅛ teaspoon black pepper
- ⅛ teaspoon salt or to taste
- 2 large wraps or tortillas of choice
Instructions
- Preheat oven to 400°F (206°C).
- Cut the tofu into 8 long rectangles. In a large plate combine the nutritional yeast, cornstarch, salt, and paprika. Mix together and coat the tofu pieces evenly in the breading. Place on a baking sheet. Spray with spray oil if you like.
- Bake for 20 minutes, flip, and bake for 5 until golden and crispy. If you would like to air fry these you can too.
- Make the dressing by adding all the ingredients into a small bowl or pitcher. Mix until well combined. Taste and adjust any seasonings.
- In a large bowl combine the chopped lettuce, vegan parmesan cheese, and half of the dressing toss to coat evenly.
- Once the tofu is done it is time to assemble the wraps. Add half of the salad to a wrap, 4 pieces of tofu, and drizzle some extra dressing over top. Roll wrap up, repeat with the other, and enjoy. If you want to grill the wrap you can do that as well.

I followed this recipe and it did not work out well. It did not get crispy at all, the cornstarch did not really cook, it still looked rare and could be dusted off after 20 minuttes in the oven.
What did I do wrong?
Hi Anne, I have to be honest I really do not know. Do you find when you bake other recipes that your oven either takes longer or a hotter temperature to cook or bake compared to to the indicated time and temperature. For the cornstarch to not cook at all after 20 minutes is very strange. Also, did you spray it with any oil?
