Prior to going vegan one of my favorite summer meals was some sort of fish with a fruit salsa and rice. It was delicious but the flavors were light. AND LET ME TELL YOU this meal beats any of the memories I had of that meal. This tofu is a little bit sweet, spicy and tangy combined with a light, fluffy coconut rice and topped off with a fresh cucumber and peach salsa. Ready in around 30 minutes this meal is sure to please anyone!
Oh good old cauliflower. The vegetable no one wanted to eat has now turned into everyone’s favorite veggie. I have made so many things from cauliflower: cauliflower gnocchi, vegan cheese, vegan coconut shrimp, mashed cauliflower. So we might as well add one more recipe to the cauliflower craze. These spicy sesame cauliflower wings are sure to make you fall even more in love with cauliflower.
Is it a secret that I am obsessed with dumplings? I don’t think so. I would eat them everyday if I could. These sweet and spicy dumplings are so amazing and you guys are going to absolutely love them. If you have never made homemade dumplings it is a bit time consuming BUT so well worth it. You should definitely watch the YouTube video if you need help learning how to pleat them.
I am on a Thai red curry coconut kick. When I like something it usually turns into all I want to eat for a week. So last week I became obsessed with my Thai red curry coconut ramen and I thought why not put it on tofu. If you like these kinds of flavors you are going to go crazy for this!
