Crustless Quiche
This easy vegan crustless quiche is so delicious. It comes together quickly and is great for brunches, lunches, or even snacking on.

- 4 cups frozen broccoli, thawed and chopped
- 4 strips vegan bacon chopped
- ¼ Vidalia onion chopped
- ⅔ cup Just Egg
- 1 cup nondairy milk, unsweetened and unflavored
- ½ cup chickpea flour
- ¾ cup pancake mix
- 1 tablespoon nutritional yeast
- Dash of salt and pepper
- ¼ cup vegan cheese
Preheat oven to 350F (176C).
In a large bowl whisk the Just Egg, nondairy milk, chickpea flour, pancake mix, nutritional yeast, salt, and pepper until smooth.
Add the chopped broccoli, vegan bacon, and Vidalia onion into the batter. Use a spatula to fold it in.
Grease a 9 x 11 baking pan with cooking spray.
Pour the batter in the baking pan. Sprinkle with vegan cheese on top.
Bake for 45 to 55 minutes until quiche has slightly puffed up. A toothpick should come out clean.
Allow to cool for 5 minutes before cutting. Cut into 6 or 8 pieces depending on how many pieces you would like.
