Crustless Quiche

This easy vegan crustless quiche is so delicious. It comes together quickly and is great for brunches, lunches, or even snacking on.

Ingredients
 
 

  • 4 cups frozen broccoli, thawed and chopped
  • 4 strips vegan bacon chopped
  • ¼ Vidalia onion chopped
  • cup Just Egg
  • 1 cup nondairy milk, unsweetened and unflavored
  • ½ cup chickpea flour
  • ¾ cup pancake mix
  • 1 tablespoon nutritional yeast
  • Dash of salt and pepper
  • ¼ cup vegan cheese

Instructions
 

  • Preheat oven to 350F (176C).
  • In a large bowl whisk the Just Egg, nondairy milk, chickpea flour, pancake mix, nutritional yeast, salt, and pepper until smooth.
  • Add the chopped broccoli, vegan bacon, and Vidalia onion into the batter. Use a spatula to fold it in.
  • Grease a 9 x 11 baking pan with cooking spray.
  • Pour the batter in the baking pan. Sprinkle with vegan cheese on top.
  • Bake for 45 to 55 minutes until quiche has slightly puffed up. A toothpick should come out clean.
  • Allow to cool for 5 minutes before cutting. Cut into 6 or 8 pieces depending on how many pieces you would like.
