High Protein Vegan Brownies

Brownies

Frosting

  • 7 ounces vegan high protein yogurt can be unflavored/unsweetened or sweetened with vanilla flavor
  • ¼ cup organic powdered sugar
  • 1 tablespoon cornstarch
  • scoop chocolate vegan protein powder

Instructions
 

  • Soak the pitted Medjool dates in ½ cup (120ml) hot water for 20 to 30 minutes.
  • Preheat oven to 375°F (190°C).
  • In a high speed blender combine the aquafaba, Medjool dates, and water Medjool dates were soaking in. Blend for 30 to 40 seconds until the dates are broken down.
  • In a medium-sized bowl combine the dry ingredients: all purpose flour, vital wheat gluten, chocolate protein powder, and baking powder. Mix to combine.
  • Melt the vegan chocolate chips at 30 second intervals in the microwave.
  • Then, add in the wet ingredients from the blender. The melted vegan chocolate chips, water, and vanilla extract.
  • Mix everything together until a batter forms.
  • Then, pour the batter into a small greased baking dish.
  • Bake for 45 to 50 minutes, until a toothpick comes out mostly clean.
  • Meanwhile, make the frosting. You can either use a hand or stand mixer to whip up everything. Store in the fridge until ready to frost.
  • When the brownies are done baking, remove from the pan, and cool for at least 20 minutes. Then, you can top with the frosting. If you want you can also dust with a little bit of protein powder. Cut into as many pieces as you want and enjoy.
