Vegan Green Goddess Dressing

This easy vegan green goddess dressing is full of herbs and made creamy with tofu!

Equipment

Ingredients
 
 

  • ¼ cup fresh parsley
  • 1 clove of garlic
  • 2 to 3 sprigs of green onion
  • 6 to 10 leaves fresh basil
  • ½ block firm tofu
  • 1 medium lemon juiced
  • Salt and pepper to taste
  • ½ teaspoon nutritional yeast optional
  • ½ cup water

Instructions
 

  • In a blender combine all the ingredients. Blend until smooth and creamy about 30 seconds to 1 minute. Taste and add in any additional salt, pepper or other seasonings to your preference.
  • Store in a jar in the fridge for up to 5 days. Shake before using.

Notes

  • This recipe makes approximately 1 ¾ cups (390ml) of salad dressing. Nutrition information is given for 1 serving (2 tablespoons [30ml]).
  • You do not need to press the tofu before using. I do pat it dry with a towel.
  • Start with ¼ teaspoon salt and pepper, then add in additional to your liking. You can also add more seasonings like onion or garlic powder.
