Carefully, mark out 16 squares in the rectangle with a knife. Then, use the knife the cut the rectangles out. I made 16 squares to get 16 vegan pigs in a blanket.
Cut 4 of the vegan hot dogs into 4 pieces, so you end up with 16 pieces.
Place a square of the puff pastry in a diamond shape. Then, put one of the pieces of the vegan hotdog on the bottom corner of the puff pastry.
Roll the puff pastry up.
Make sure the tail of the puff pastry is tucked and wrapped up. If you find its not sticking, you can add a little drop of water to the puff pastry and it will stick to itself.
Place the unbaked vegan pigs in a blanket on a lined baking sheet. Spray with oil. Then, top with some minced onion.
Bake at 400°F for 12-15 minutes, or until golden brown. Some of the puff pastry may expand and open up. It is okay, all tastes the same!
