A fun twist on traditional Caprese salad using strawberries instead of tomatoes! Made vegan with vegan mozzarella.

Ingredients
  

  • 1 8 ounce block vegan mozzarella, cubed
  • 10-13 large strawberries quartered (around 275g)
  • 7 basil leaves chiffonade
  • 1 tablespoon light olive oil
  • 1 tablespoon balsamic glaze
  • Generous pinch flaky salt

Instructions
 

  • In a large bowl combine all ingredients.
  • Mix until well incorporated.
  • To serve garnish with extra basil, balsamic glaze and sea salt if desired.
