Add all ingredients into a high speed blender. There is no need to press the tofu. Blend for about 1 minute or until creamy and smooth. Taste and add more salt if desired.
If you want to make it into the toast just add a few scoops of the vegan whipped ricotta into either ziploc bag or piping bag with a corner cut off. Move the bag back and forth to make big beautiful swirls.
