Vegan Whipped Ricotta

This easy 4 ingredient vegan whipped ricotta is made with tofu! It comes together in just a few minutes and is so fun.

Equipment

Ingredients
 
 

  • 1 block (14 ounces) firm tofu
  • 2 tablespoons extra virgin olive oil
  • ½ lemon juiced
  • 1 teaspoon salt or to taste

Instructions
 

  • Add all ingredients into a high speed blender. There is no need to press the tofu. Blend for about 1 minute or until creamy and smooth. Taste and add more salt if desired.
  • If you want to make it into the toast just add a few scoops of the vegan whipped ricotta into either ziploc bag or piping bag with a corner cut off. Move the bag back and forth to make big beautiful swirls.
