Ingredients
 
 

  • 1 broccoli crown cut into florets (about 10 ounces)
  • ½ head cauliflower cut into florets (about 7.5 ounces)
  • 1 red bell pepper cut into rough square-like pieces (about 4.5 ounces)
  • ½ red onion cut into square-like pieces (about 6.7 ounces)
  • 1 tablespoon olive oil
  • ¼ teaspoon salt add more to taste
  • ¼ teaspoon black pepper add more to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Prepare all the vegetables according to their cuts in the directions.
  • In a large bowl toss the vegetables with the oil, salt, and pepper.
  • Spread out over a large silicone mat or parchment lined baking sheet.
  • Bake for 40 minutes or until the vegetables are softened to your liking.
  • Taste an add more salt and pepper if desired. Garnish with a sprig of thyme or rosemary for a seasonal garnish.
