I have really been enjoying giving you all full menu ideas this holiday season. So, when I was thinking about the Christmas/Holiday menu I felt an easy roasted vegetable medley was the perfect side dish. While roasted vegetables are a simple dish they are delicious when done right.
For this recipe I tried to stick with some Christmas and winter colors with red, white, and green. I also thought about the flavor of everything together.
This roasted vegetable medley came out so delicious and will pair perfectly with any main course.

- Broccoli: I love roasted broccoli the flavor is amazing. Of course this covers our green color.
- Cauliflower: Just like roasted broccoli, roasted cauliflower is equally as delicious and amazing. Adding in our white color for some snow and wintry representation.
- Bell Pepper: I love red bell peppers and they roast up with such incredible flavor. If you want to swap it out for a different color of course you can but this is the red for our
- Red Onion: I think some onion adds in great flavor and the red onion, while it is purple, just adds in more beautiful color.
- Olive Oil: roasted vegetables definitely come out best when they are made with olive oil.
- Salt and Black Pepper: the vegetables have such great flavor we only need a little salt and pepper to add in some flavor.
how to make the holiday roasted vegetable medley
Before I tell you the directions, this is a very simple recipe. But as we all know sometimes simple is better. The flavors of the vegetables come through so beautifully and it pairs so well with your main dish.

- Cut the broccoli and cauliflower into florets. I keep a little bit of the broccoli stems but not too much. I like to cut the bell pepper and onion into large squares.

- In a bowl mix the vegetables with the olive oil, salt, and pepper.

- Spread the vegetables out onto a silicone lined or parchment lined baking sheet.

- Roast in the oven for 30 minutes or until the vegetables are soft.

Again, this is the perfect side dish for any recipe but here are some suggestions and ideas. Of course, I have even more recipes under the Dinner section of the blog.
what other vegetables can I add to this?
Here’s the thing there are of course no rules when it comes to this dish. Add in any vegetables you enjoy.
- Potatoes: Sweet potatoes or Yukon Gold would be great here.
- Garlic: You can add in the cloves whole, it will add great flavor.
- Zucchini: It is delicious when roasted, I would just slice into circles.
- Butternut Squash: It will add extra sweetness to the dish.
- Carrots: I personally love to cut these on a bias. They cook up so nicely.
- Asparagus: While it isn’t my favorite vegetable when it is cooked right, it is so delicious.
- Brussels Sprouts: these are always a fun and seasonal veggie to add in.
- Beets: while I love beets I tend to stay away from roasting them because they can be a bit messy. However, they are so so delicious.
- Green Beans: they add in nice texture as they tend to be a bit firmer.

Every holiday of course needs some sort of vegetable. We need some color, vitamins, and nutrients. But when there are so many other more involved dishes going on it is nice to have something simple to make.
There is so much flavor naturally from the vegetables that we don’t need tons of extra spices or seasonings. You can also truly add in whatever vegetables you like.

Up to 4 days in the fridge.
How do I warm up leftovers?
You can place them in the oven, air-fryer, microwave, or on the stove with a pan.
I am oil free, what can I do instead?
Add in a little bit of vegetable broth, about ¼ cup (60ml) should be good to the bottom of the pan. It will help soften the vegetables and add nice flavor.
I don’t have an oven, how else can I make this?
While the main way to make this recipe is in the oven. You can also do it in air fryer or cook the vegetables on a big pan on the stove.

Holiday Roasted Vegetable Medley
Ingredients
- 1 broccoli crown cut into florets (about 10 ounces)
- ½ head cauliflower cut into florets (about 7.5 ounces)
- 1 red bell pepper cut into rough square-like pieces (about 4.5 ounces)
- ½ red onion cut into square-like pieces (about 6.7 ounces)
- 1 tablespoon olive oil
- ¼ teaspoon salt add more to taste
- ¼ teaspoon black pepper add more to taste
Instructions
- Preheat oven to 375°F (190°C).
- Prepare all the vegetables according to their cuts in the directions.
- In a large bowl toss the vegetables with the oil, salt, and pepper.
- Spread out over a large silicone mat or parchment lined baking sheet.
- Bake for 40 minutes or until the vegetables are softened to your liking.
- Taste an add more salt and pepper if desired. Garnish with a sprig of thyme or rosemary for a seasonal garnish.
