an iced butternut squash latte might sound a little strange at first, but think of it as a pumpkin spice latte. it has all the flavors of fall in a delicious coffee.

the inspiration
I love going to cute little coffee shops, I mean who doesn’t? But as much as I try to support local business the drinks are getting expensive. I also really like making a huge latte at home and drinking it over the course of an hour or two.
So, I figured it would be fun to make a fall latte but do something a bit different. This uses butternut squash puree, along with lots of fall spices, to make something delicious. I decided to make mine iced but you can of course always serve it hot too.

the ingredients
- Butternut Squash Puree: we will blend the puree with other ingredients to integrate the flavor well. You can make homemade butternut squash puree or buy it from the store.
- Coffee: you can use any coffee you like. I used an instant decaf, I know not a popular choice among coffee aficionados. However, I find it to be great. You can also make this a tea latte and swap the coffee for tea.
- Non-Dairy Milk: you can use any non-dairy milk you like. I do like to use something a bit creamier like soy or oat.
- Maple Syrup: this will add sweetness to the latte, as well as nice maple flavor.
- Cinnamon: we will add this right into the coffee to add flavor.
- Nutmeg: the same as the cinnamon, for a nice seasonal touch.
- Vanilla Extract: I like to add in vanilla extract, you can omit if you prefer not to.
- Stevia in the Raw: I do not want my lattes to be super high in calories or sugar so I prefer to use stevia in the raw to sweeten it further. You can use any sweetener you like.
how to make butternut squash latte

- Prepare your coffee in whatever method you need to. Let it cool for 5-10 minutes.

- In a frother add the butternut squash puree, non-dairy milk, vanilla, and maple syrup.

- My frother has cold and warm settings. So, I put it on the cold setting and let it run twice.

- In a large jar or glass add a lot of ice. Then, I like to add the stevia in the raw, cinnamon, and nutmeg before adding in the coffee. Pour in the coffee and mix together.

- Finally, top with the liquid from the frother and mix all together. Taste and add in any other flavors if desired. Enjoy.
what else can i add to this butternut squash latte?
Here are some fun ideas to amp this coffee up even more:
- Swap the coffee for espresso for something stronger.
- Add in a protein shake like Koia to turn this into a protein latte.
- If you want to make a bit more decadent you can add some vegan whipped cream or vegan caramel to the latte.
