A vegan version of a the classic Italian hero! Filled with vegan cold cuts, vegan cheese, lettuce, artichoke, red onion and made special with using Mezzetta’s roasted red bell peppers and golden Greek pepperoncini. An easy and delicious meal that is perfect for summer.
I am so excited to bring you this recipe in collaboration with Mezzetta. They wanted to have people share recipes for a Summer Staycation and nothing screams summer to me like a big, old sandwich! Mezzetta has a lot of delicious products such as jarred olives, jarred peppers, pizza and pasta sauces, pickled vegetables, marinades and more! Making them the perfect addition to any recipe to give it a little something special. The two jarred peppers I used were: the roasted red bell peppers and the golden Greek pepperoncini. The roasted red peppers are used to make a vegan roasted red bell pepper mayo that really takes the sandwich to the next level. The golden Greek pepperonicini add just a little bit of heat and bite to the sandwich that is so good.
For this sandwich you will need some vegan cold cuts and vegan cheese. That can be easily found in many grocery stores in a special section by the fruits and veggies. I decided to go with vegan turkey, vegan bologna and vegan provolone. But the best part about a sandwich is you can customize it to what you like! Add extra toppings, different vegan cold cuts and just play around with it. There are endless possibilities when it comes to a sandwich!
I also love heroes for summer because they are great for the beach or lazy days by the pool. They can feed a bunch of people so they are great for families too. Growing up we always had Italian heroes at barbecues and family gatherings so it just always makes me think of summer. I suggest you buy a bread that is soft and not too thick so that way the sandwich is easier to eat. Now grab an iced tea, some chips and a piece of your sandwich and let’s relax.

INGREDIENTS
1 (16 inch) loaf of Italian bread
1 cup (220g) Mezzetta roasted red bell peppers, chopped
½ cup (112g) vegan mayonnaise
12 slices vegan turkey
12 slices vegan bologna
8 slices vegan provolone
10 Mezzetta golden Greek pepporoncini, sliced
1 cup (75g) chopped iceberg lettuce
1 cup red onion (100g), sliced
4 artichoke hearts (120g), quartered
METHOD
- In a small bowl combine the chopped Mezzetta roasted red bell peppers and the vegan mayonnaise. Mix well to combine.
- Cut the bread open and cut around the rounded edge slightly to the back but not all the way so the bread is still connected.
- Spread most of the roasted red bell pepper mayonnaise on the bottom of the bread and a little bit on the top. Then layer the vegan cheese, vega turkey, and vegan bologna. Top with the artichoke, lettuce, sliced Mezzetta golden Greek pepperoncini and red onion.
- Close the hero and cut into 4 or 6 slices depending on how many servings you would like.
Serves up to 6.
