we are in the dog days of summer and it is so hot, so time to cool off with this fizzy banana coconut mocktail! made with blended bananas, coconut milk, lime juice, maple syrup, and then topped with seltzer for a sweet, creamy, refreshing drink.
I really have come to love making drink recipes. Maybe because they are usually less work and look so pretty but I just love them. This drink, which I am calling the Fizzy Banana Coconut Mocktail, is for all my friends who like dessert drinks. It is easy to make and the seltzer actually helps it to not be so overly decadent and rich.
The Inspiration
So, I was thinking about how my mom always loves a banana drink that was so thick and creamy it was almost like ice cream. She loved it but after about drinking half she didn’t want too much more because it was just too much. So I thought how can I still enjoy a creamy banana and coconut drink that isn’t too heavy? Because honestly in the summer when it is so hot I just need something to quench my thirst. I figured if I used banana and lite coconut milk combined with seltzer it will be creamy, and delicious but light.
Lite Coconut Milk
I personally like to use lite coconut milk because I feel it still has the same creamy effect without being too heavy. The difference between lite coconut milk and full fat coconut milk is just that lite coconut milk has less fat. It is usually a thinner liquid as well. If you want to use full fat coconut milk you of course can. You can also use coconut cream, however, that will definitely take this from a lighter refreshing drink to something more decadent and rich. Nothing wrong with that just want to make sure you know what you are buying!
Fizzy Banana Coconut Mocktail FAQ
- Can I freeze the banana ahead of time? Sure! It will make this even more creamy and delicious. I did use a non-frozen banana for this recipe.
- Can I add alcohol to this? I think some rum or a coconut flavored liquor would be delicious.
- Can I make this ahead of time? If you want to prep these for some company you could make the banana coconut blended part ahead of time, you may need to reblend before adding to a glass. You can also prep the glasses with the coconut ahead of time.
- Is this drink super sweet? No, it isn’t! I don’t love when drinks are too sweet so this is the perfect amount of sweetness without it being drowning in sugar. If you want it sweeter you can add more maple syrup, or rim the glasses with coconut and organic sugar.

Fizzy Banana Coconut Mocktail
Equipment
Ingredients
- .5 ounce coconut chips (15g)
- ½ cup (120ml) lite coconut milk
- 1 banana (about 3 ounces/80g), sliced
- ½ lime juiced (about 1.5 tbsp/22ml)
- 2 tablespoons (30ml) maple syrup
- ½ cup (120ml) seltzer, or more to top off glass
- Lime wedge for garnish
- Ice cubes
Instructions
- In a blender or food processor add coconut chips and blend until crumbly and fine. Place on a dish. You can also use shredded coconut if you prefer.
- Into blender add banana, coconut milk, maple syrup, lime juice, and 3 ice cubes. Blend until smooth.
- Use a piece of lime to wet the rim of the glass and then coat in the blended coconut chips.
- Fill glass with ice cubes then add half of the blended drink. Top with seltzer until filled to top.
- Garnish with more of the crumbled coconut and piece of lime.

- Coconut Milk used is lite Trader Joes, the lite Thai Kitchen coconut milk is also great

- You can use different seltzer flavors to add variety – plain, coconut, even orange or lime would be great

Can I replace the seltzer with anything?
I don’t want alcohol and I’m not sure where to find it where I live.

hi Alice! I am not sure where you live but seltzer is just water with bubbles! may be called club soda! you can leave it out but then it won’t be fizzy.

Drinking one right now 🙂 I only had cherry lime flavored seltzer on hand, and had to use honey to sweeten (ran out of maple), but this is delicious!
