I love mac and cheese. It is complete and utter comfort food. When we were younger my mom always made a stovetop mac and cheese. It is great as a side dish or a main. You only need a few ingredients: vegan cheddar cheese, Golden Wing barley milk, seasonings, vegan sour cream and pasta! Trust me you will love it.
Golden Wing Barley Milk
Since, I have gone vegan (over 6 years ago now) it has been really cool to see all the amazing products being made. One of which is barley milk! It is rich and creamy making it perfect for this recipe. The companies idea behind using barley dates all the way back to the Roman gladiators. They were nicknamed “horederaii” which means “barley men” since their diets were heavily plant-based and made up a lot of barley. This allowed them to become strong and heroes! I found the story behind that to be really cool.
Why Is Golden Wing’s Barley Milk Better?
There are lot of reasons to love this product! Here are just a few:
- It only has 5 ingredients: barley milk (water, barley, barley malt), sunflower extract, calcium carbonate, pink Himalayan salt, and shiitake mushroom extract.

Stovetop Mac & Cheese Goodness
I think stovetop mac & cheese is a lot better than a baked one. There, I said it. When mac & cheese is baked it can easily dry out and I don’t always feel like cooking again after just cooking everything. Stovetop vegan mac & cheese is already gooey, melty, and perfection. It is also way better than any of the boxed vegan mac & cheeses out there! All you need are 10 ingredients, 4 of which are just seasonings!
Tips for the Best Stovetop Vegan Mac & Cheese
- The pasta shape matters. I suggest using elbows, shells, or cavatappi. It holds the vegan cheese the best.
- Once the vegan cheese melts, start mixing. Vegan cheese is a bit notorious for not being the best melter but once it starts to melt down just keep mixing the vegan cheese sauce. It will help everything come out smoother.
- Don’t be afraid to add more liquid. If the vegan cheese sauce isn’t looking smooth you may need to add in a few more tablespoons of barley milk.
Stovetop Vegan Mac & Cheese FAQ
- Can I make this ahead of time? I would really suggest making this fresh. However, if you want to make it ahead of time you can and then when you heat it up add in some extra barley milk.
- Can I freeze this? Yes, just thaw it before serving. Again, you will most likely need to add in extra barley milk and vegan cheddar cheese while warming up.
- Best way to reheat this? On the stove, but if you have to microwave you can as well.
- What else can I add to this? You can add broccoli, tofu, tempeh, seitan, and my favorite toppings on mac & cheese are buffalo sauce and vegan ranch!
Stovetop Vegan Mac & Cheese
Ingredients
- 8 ounces (227g) pasta of choice
- 1 cup (240ml) Golden Wing barley milk
- 1 cup (120g) vegan cheddar cheese
- 1 tablespoon (5g) nutritional yeast
- ¼ teaspoon garlic powder
- ¼ teaspoon onion power
- ¼ teaspoon paprika
- ½ teaspoon salt
- 3 tablespoons (45g) vegan sour cream
- 2 tablespoons (28g) vegan butter
Instructions
- Boil pasta in salted water according to package directions.
- In a separate pan add the remaining ingredients. Cook over medium low heat stirring continuously until everything is mixed together and well incorporate. You can either whisk or use a rubber spatula.
- Once, pasta is done drain it.
- Add pasta to the vegan cheese sauce and mix together.
- Serve immediately and enjoy.
