I know we are all busy so I have created three, 30 minute meals for you all to enjoy! They are easy to make, full of flavor, and super cozy and comforting. This first one is made with heart of palm “pasta” which is a great gluten free alternative and a sneaky way to add in more veggies. Topped with vegan chick’n and vegan cheese, your whole house is sure to love this vegan chick’n parm pasta.
Heart of Palm Pasta
Why do I use heart of palm pasta? There are a few reasons: 1. It cooks up quicker 2. Great for eating for my own diet needs right now 3. Adds in an extra veggie! If you don’t want to use heart of palm pasta you don’t have to. You can use zoodles, brown rice pasta, regular pasta, chickpea pasta – whatever you like and works for you. I just really like that the heart of palm pasta is ready in a few minutes!
Vegan Chick’n
For this recipe I used some Like Meat vegan chick’n. I had in the freezer and wanted to use it up so it worked out perfectly! You can use any vegan chick’n you like. I also love the Boca Chick’n Patties for this. If you want to leave out the vegan chick’n you could swap in some tofu, tempeh, chickpeas, or even cooked lentils!

Easy Vegan Chick’n Parm Pasta FAQ
- Can I use regular pasta? Of course. It may add a few minutes of time to the recipe.
- What would be other good vegetables to use? Peas, kale, or peppers could be yummy.
- What pasta sauce do you use? I like to use either Rao’s, Carbone’s or Vincent’s.

Vegan Chick’n Parm Pasta
Ingredients
- 10-12 pieces frozen vegan chicken (about 10 ounces/288g)
- 9 ounces (256g) heart of palm pasta
- Large handful spinach (about 1 ounce/30g)
- 5 ounces (145g) frozen or fresh broccoli
- 1 cup (240ml) tomato sauce
- 4 tablespoons (20g) vegan parmesan
- ⅓ cup (37g) vegan mozzarella
- Salt and red pepper flakes to taste
- Basil for garnish
Instructions
- Preheat oven according to package directions for vegan chick’n. Once heated prepare according to package directions and cook until finished.
- Meanwhile, in a large pan add the spinach, broccoli, and heart of palm pasta. You can add in about 1 tablespoon of water. Cook over low heat for 5 to 7 minutes to warm everything up.
- One warmed up add in the pasta sauce and continue to cook for another few minutes. Add any seasonings you like.
- Once the vegan chick’n is done cooking, cut into small pieces.
- Add the chick’n on top of the noodles.
- Then top with vegan parmesan and vegan mozzarella. Cover with a lid and let it steam on low heat for 2 to 3 minutes or until vegan mozzarella is melted.
- Garnish with red pepper flakes and fresh basil if you like.

- Vegan parmesan used is Whole Foods 365.
- Vegan mozzarella used is Violife shreds.
- To reheat you can warm up in microwave or pan on stove.
