there is just nothing that I love more than a vegan quesadilla. these are filled with refried beans, seasoned tofu, and vegan cheese. paired with a pico de gallo and ready in 30 minutes. making these vegan oven baked quesadillas the best meal!
This recipe is part of a three 30 min meal video I created for you all. I know this time of year gets very busy so I wanted to give you some easy recipes. These vegan oven baked quesadillas are great because you don’t need to cook each one individually you just cook them all once. The refried beans make a very easy filling to spread and some tofu for extra protein.
Quesadilla 101
I am not claiming anything about these quesadillas are authentic. The traditional quesadillas actually date back to the 16th century and were made with corn tortillas. Of course now quesadillas have spread worldwide and in America they tend to be made with flour tortillas. If you are curious to learn more about quesadillas this is an interesting article, and there’s actually a big history to this popular dish!
Vegan Refried Beans
In this recipe I use refried beans from a can. Of course, if you like to make your own or batch prep them feel free to use those. When looking at refried beans just check the ingredients for lard. I like to get the one from Trader Joe’s. The ingredients are simple and it is tasty. Alternatively, you can always mash up black beans or pinto beans on your own.
Tips For Baking Quesadillas
- Do not over bake. If you bake these too long they will get too crispy and won’t have that soft texture on the inside.
- Do not overfill. You just want to fill it enough so that when you fold it over it is full but not spilling out.
- Spray oil. Coat the quesadillas really well. This helps to give them that outer crispy texture without having to individually brush them with oil.
Vegan Oven Baked Quesadillas FAQ
- What vegan cheese do I use? I used Violife Mozzarella and Violife Cheddar shreds.
- What tortillas do I use? I like to use the low carb flour tortillas, but use anyone you like that is a medium size.
- Can these be made gluten free? Yes, just use a corn tortilla.
- Can these be made soy free? You can swap the tofu for some crumbled seitan sausage, like the Field Roast Mexican Sausage. You can also leave it out and just do beans and vegan cheese.
- What can I serve on the side with this? To keep the meal quick I would heat up some frozen rice, maybe a little side salad and then you can enjoy. Another fun side would be some guacamole.

Vegan Oven Baked Quesadillas
Ingredients
Quesadillas
- 5 tortillas of choice
- 8 ounces (227g) extra firm tofu
- 1 tablespoon taco seasoning
- 1 teaspoon garlic powder
- ½ teaspoon cumin
- 1 teaspoon salt
- ¾ cup (193g) vegan refried beans
- Heaping ⅓ cup (45g) vegan cheddar cheese
- Heaping ¾ cup (80g) vegan mozzarella
- Spray oil
Pico de Gallo
- 1 tomato chopped (about 4.7 ounces/130g)
- 1 jalapeño chopped (about 1 ounce/30g)
- 1 green onion chopped
- ⅛ sweet onion chopped (about .5 ounce/20g)
- ¼ lemon or lime juice
- Salt to taste
Instructions
- Preheat oven to 375°F (190°C).
- Crumble the tofu into small pieces with your hands. You do not need to press the tofu. Add the seasoning and mix together.
- Take one tortilla and add a 2 large spoonfuls of beans. Spread with the back of your spoon. Add a sprinkle of vegan cheese, and a few spoonfuls of the seasoned tofu.
- Repeat until all are made.
- Generously, spray with spray oil and then place on a baking sheet.
- Bake for 15 minutes, then carefully flip and bake for another 3 to 5 minutes until crispy or golden.
- Meanwhile, prepare the pico de gallo by chopping all the ingredients and mixing together.
- Once the quesadillas are done, cut in half and then serve with pico de gallo. Add any additional toppings, like green onion or cilantro.

- Please note I am not claiming these are authentic quesadillas or pico de gallo recipes, they are inspired by Mexican cuisine.
- In the pico de gallo, I used lemon juice because I did not have limes.
- The pico de gallo is spicy if you want it to be less spicy use less jalapeño.
- Feel free to serve with guacamole, vegan sour cream, or anything else you like.
- To reheat either place in microwave, pan, oven or air fryer.
