one of my favorite meals is vegan tzatziki with rice and vegan yogurt tofu or seitan. it is so delicious, light but also filling and has tons of flavor.
This is the perfect summer dinner. Filled with lots of delicious lemon flavor, fresh dill, and creamy vegan yogurt I bet it will be one of your favorites too. It is also great for meal prep or a make-ahead meal as the tofu will take some to marinate.
Vegan Yogurt Marinated Tofu
If you have never marinated something in vegan yogurt you are missing out. It will add a nice crisp on the outside, add a nice tanginess, and color. I prefer to use a vegan Greek style yogurt. I have really been enjoying the Kite Hill Greek-Style yogurt. However, if you want to use a different kind just make sure it is unsweetened and unflavored. I wouldn’t necessarily advise against using a coconut based one but it could add a slight coconut flavor.
Vegan Tzatziki
This version of vegan tzatziki is easy to make but it isn’t the most authentic version. It is a quickened version. All you need to do is grate some cucumber, squeeze out the water. Use the more vegan Greek-style yogurt, garlic powder, salt, lemon juice, and some fresh dill. Mix it all up and there you go super delicious! This is just great on its own, I could eat it with a spoon.

- What do you pair this with? I like to make mine with some rice (I used Right Rice for extra protein) and any veggie you like.
- How long does this last? The tofu will last up to 4 days in the fridge, the tzatziki will last up to 3 days in the fridge.
- How long can I let this marinate? You can marinate it for up to 6 hours.
- Can I use extra firm tofu? Yes, just press it beforehand.
- Can I replace the tofu? You can use seitan.

Vegan Yogurt Marinated Tofu Kabob

- Metal Skewers or Wooden Skewers
Ingredients
Vegan Yogurt Marinated Tofu
- 1 package (16 ounces/454g) super firm tofu
- 3 tablespoons (45g) vegan yogurt
- 2 to 3 sprigs fresh dill or ½ teaspoon dried dill
- ½ medium to large lemon juiced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ¼ teaspoon turmeric
- ¼ teaspoon paprika
- ⅛ teaspoon black pepper
Vegan Tzatziki
- ¾ cup (170g) vegan yogurt
- 2 to 3 sprigs fresh dill or ½ teaspoon dried dill
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ medium to large lemon juiced
- ⅓ English cucumber (about 110g)
Instructions
- Use a sharp knife to cut the tofu in 5 equal crosswise cuts. Then cut the smaller rectangles into thirds lengthwise.
- In a bowl combine the remaining tofu marinade ingredients. Mix together well. Add in the tofu and gently toss to coat in the marinade. Marinate covered in the fridge for at least 45 minutes or up to 6 hours.
- 1 hour before getting ready to cook the skewers prepare the vegan tzatziki. Grate the cucumber using a box grater. Squeeze out the excess water with a paper towel. Add into a bowl with the vegan yogurt, seasonings, dill, and lemon juice. I like to gently rip the dill with my hands but you can chop it if you like.
- I prefer to use a small electric indoor grill like a George Foreman or Ninja to grill these kabob. You can also do it on a grill pan or roast them in the oven.
- Spray the grill with a spray oil or lightly rub with olive oil. Place the kabob on the grill and grill for several minutes until grill marks are formed and they are crispy. Rotate to continue cooking additional sides until all are grilled and crispy.
- Once down enjoy with the vegan tzatziki and any sides you like. I paired mine with Right Rice, you can do tomatoes, cucumber, salad anything you enjoy.
