These cinnamon sugar pumpkin spice bagels are perfect to make on Sunday mornings. They use the Greek-yogurt method (in our case vegan yogurt) so there is no yeast, no rising time. no waiting around. The bagels only take about 20 minutes to prep and 20 minutes to bake. You can make the vegan cream cheese the night before or before you start the bagels. It’s so easy!
Vegan Yogurt Dough
Maybe you’ve seen this floating around this recipe floating around the internet. I am not claiming to come up with the yogurt dough idea. The vegan yogurt and the flour work together (along with some baking powder) to create the rise in the bagels. You can use this idea of the dough to make any type of bread: bagels, pretzels, pizza it is pretty awesome.
Best Vegan Yogurt
My current favorite vegan yogurt is the Kite Hill Greek Style yogurt. It is made with almond milk and soy. I did not try this recipe without using a Greek style yogurt. If you do I can’t speak for certain how it will work. Also, be sure to use an unflavored and unsweetened vegan yogurt.
What is Pumpkin Pie Spice?
Pumpkin pie spice is the blend of spices that typically go in pumpkin pie. This would be cinnamon, nutmeg, allspice, and ginger. Depending on the brand there could be more or less spices in there. If you don’t want to buy pumpkin pie spice and you have cinnamon and nutmeg you can get away with just that. Otherwise, you can order it here.
Vegan Maple Walnut Cream Cheese
Now, of course you will need something delicious to spread on these bagels. The best pairing is this maple walnut cream cheese. Only 3 ingredients, very easy to make, and the tanginess, sweetness, and crunch go perfectly on these bagels. I used Miyokos Vegan Cream Cheese but my favorite one for this would be Kite Hill. Tofutti is also another great option. Just mix up the maple syrup into the vegan cream cheese, fold in chopped walnuts and there you have it.

- Is the texture like a yeast bagel? No. It is a bit different, they are almost even slightly muffin like. They are very delicious, everyone who tried them loved them.
- How long do the bagels last? Up to 3 days on the counter in a container. You can also freeze them and warm it up in the oven or microwave.
- How long does the vegan cream cheese last? Up to 5 days in the fridge.
- What else could I spread on the bagel? You can use vegan butter, peanut butter, or even just plain vegan cream cheese.
- Can this be made gluten free? I have not tried it with gluten free flour but you can use a 1:1 gluten free substitute.
- Is this recipe nut free? No.
- What does the agave wash do? It gives the bagels a bit of caramelization and color on the outside, a touch of extra added sweetness, and helps the oats and cinnamon sugar to stick/

Cinnamon Sugar Pumpkin Spice Bagels
Ingredients
BAGELS
- ¾ cup (170g) vegan Greek-style yogurt
- ¼ cup (65g) pumpkin purée
- 1 tablespoon (21g) agave
- 2 ½ cups (300g) bread flour
- 1 teaspoon (4g) pumpkin pie spice
- 1 tablespoon + 1 teaspoon (20g) baking powder
- Pinch salt
AGAVE WASH
- 1 tablespoon (11g) agave
- 1 teaspoon (5ml) water
CINNAMON SUGAR OAT TOPPING
- ¼ cup (24g) rolled oats
- 2 teaspoons (8g) cinnamon sugar
MAPLE WALNUT VEGAN CREAM CHEESE
- 4 ounces (112g) vegan cream cheese
- 3 tablespoons (45ml) maple syrup
- ¼ cup (30g) chopped walnuts
Instructions
- Preheat oven to 350°F (176°C).
- Prepare the vegan cream cheese: in a bowl combine all the ingredients with a spatula and refrigerate for at least one hour. This can also be done the night before.
- Prepare the dough: in a large bowl combine the vegan yogurt, pumpkin purée, and agave. Mix with a spatula until well combined. Sift in the bread flour and baking powder. Then add in the pumpkin pie spice and salt. Mix together with the spatula until a shaggy dough is formed.
- Knead the dough: use clean hands to knead the dough until it forms into a smooth dough. Divide the dough into 4 balls.
- On a clean lightly floured surface roll one of the balls out into a thick, 6 inch long cylinder. Bring the two ends together to form the bagel. If you need a visual just watch the video.
- Once all the bagels are formed. Brush them with the agave wash. Mix the agave and water in a small bowl and use a silicone brush to wash it over.
- Sprinkle the oats and cinnamon sugar over top of the bagels.
- Bake for 20 minutes or until golden brown.
- Once done baking let the bagels cool for at least 15 minutes before enjoying with the vegan cream cheese.

Notes
- In the recipe I use both agave and maple syrup. If you would like to use just one or the other you can do that.
- You can easily make cinnamon sugar if you don’t have it by combining ½ teaspoon of cinnamon and 2 teaspoons of organic sugar.
