This soup has been on my radar for a little while now! I keep seeing creamy tomato soups with tortellini so I figured it was time to make my own version. I will be honest tomato soup doesn’t thrill me but a tomato soup based on vodka sauce definitely does. So, that is where the vodka tortellini soup came from.
How to Cook with Alcohol
Cooking with alcohol is something that always intimated me. I was always apprehensive and I won’t lie I thought I was going to get drunk from not cooking it down enough. I know that sounds silly but I was just nervous. So, after the first time I cooked with alcohol and realized how easy it was I wasn’t scared anymore. Here are some tips:
- Cook with liquors you like to drink. Don’t use the most expensive top shelf vodka but use one you like to drink. I like Tito’s for this.
- Do not have a high flame. Liquor is of course flammable so lower the heat and don’t spill anything. If you are really nervous just turn the heat off for a second.
- Let it reduce. It takes a few minutes for the liquor to reduce and cook down so let it do it’s thing.

Vegan Tortellini
I use the vegan tortellini from Kite Hill for this recipe! Now, if you want to be really extra you can actually make your own. I have a recipe on the blog for it but I will say it is very time consuming. The tortellini work well here because it is little pocket of pasta filled with vegan cheese and it is so delicious. However, if you can’t find vegan tortellini I think gnocchi would be a great alternative.
Vodka Tortellini Soup FAQ
- Can I leave out the vodka? Totally, it will still be delicious.
- Can I use other veggies in here? If you want to use kale instead of spinach. You could also add in some broccoli or chopped bell pepper.
- I can’t find vegan creamer where I live, what can I substitute it with? You can use a cashew cream like this recipe.
- How long will this last in the fridge? 3 to 4 days.
- How do I reheat this? In the microwave or on the stove.

Vodka Tortellini Soup
Ingredients
- 1 tablespoon (15ml) olive oil
- ½ tablespoon (6g) vegan butter
- ¼ sweet onion chopped (about 2.5 ounces/70g)
- 3 large cloves garlic chopped (about .8 ounces/23g)
- ¾ cup (180ml) vodka
- 4 cups (960ml) water
- 2 to 3 tablespoons tomato paste (30g to 45g)
- 1 ¼ cup (300ml) vegan creamer
- 1 tablespoon (15g) vegan parmesan, plus more for topping
- 1 tablespoon (12g) organic sugar
- ½ teaspoon salt
- ½ teaspoon garlic powder
- 1 package (9 ounces/255g) vegan tortellini
- Few large handfuls spinach (about 4 ounces/115g)
- Basil for garnish
- Red pepper flakes for garnish
Instructions
- In a medium pot add the olive oil and vegan butter allow it to melt over low heat. Add in the onions and garlic. Sauté over medium low heat for 5 to 7 minutes until fragrant.
- Pour in the vodka and allow to cook for another 7 minutes or until the vodka has been reduced by half.
- Squeeze in the tomato paste and add in vegan creamer. Mix together until well incorporated. Then pour in water, sugar, salt, garlic powder, and vegan parmesan.
- Simmer the soup for 15 minutes over medium high heat to reduce some of the broth.
- Add in the spinach and vegan tortellini. Cook for 3 to 4 minutes until tortellini float to top and spinach is wilted.
- Taste soup and add any additional seasonings you like.
- Serve into a bowl and add red pepper flakes, more vegan parmesan, and basil for garnish.
