I wanted to create a super easy drink recipe that would be sweet and full of flavor. This vegan pumpkin pie mocktail is the perfect addition to your holiday or Thanksgiving table. All you have to do is blend some ingredients and then add a little cookie crumbs and vegan whipped cream.
Coconut Milk and Non Dairy milk
This recipe calls for two types of plant milk: canned coconut milk and non dairy milk. For the canned coconut milk I like to use a lite coconut milk. You can of course use a full fat coconut milk as well. It will just be a thicker drink. For the non dairy milk you want to use something that comes in a bottle or carton like: almond milk, oat milk, cashew milk, rice milk, hemp milk or my personal favorite pea protein milk.
Pumpkin Pie Spice
Pumpkin pie spice is a blend of seasonings. If you can’t find it or don’t have it you can jus always add in a sprinkle of nutmeg, cinnamon, and allspice. If you don’t have all those ingredients just the cinnamon will be fine.

- Can this be made ahead of time? I honestly think this is best when made fresh, but if you wanted to make it an hour ahead of time you should blend again before servinb.
- What vegan whipped cream do you use? My favorite is Reddi Whip almond or coconut.
- Where are the cup from? They are from Pottery Barn last year, unfortunately as of 11/21/22 they are no longer available.

Vegan Pumpkin Pie Mocktail

Drink
- ½ cup (120ml) canned coconut milk
- ½ cup (120ml) nondairy milk
- ¼ cup (60g) pumpkin purée
- 1 tablespoon (15g) apple butter
- ¼ teaspoon (5g) pumpkin pie spice
- 3 tablespoons (45g) agave or maple syrup
- 1 teaspoon (5ml) vanilla extract
Topping
- 2 golden Oreos, crushed
- Vegan whipped cream, for topping
Instructions
- Blend the cookies until finely crumbled. Set aside in a small bowl.
- In a blender add all the ingredients for the drink and blend until smooth.
- Divide the drink amongst 2 cups filled with ice.
- Add cookie crumbs, then vegan whipped cream, and more cookie crumbs. Enjoy.

Notes
- For my cookies I used the Trader Joe’s Pumpkin Joe-Joes. They are so delicious but if you can’t find those the golden Oreos will be good.
