let’s welcome spring with a yummy vegan pizza! this pizza con patate or potato pizza is the first recipe in my new $10 or less meal series. i want to help you make delicious recipes that are budget friendly. pizza con patate is very filling and so yummy.
I love pizza con patate for a few reasons. Obviously, it is potatoes on pizza I mean where can we go wrong? It is quite easy to make. It looks so fancy and beautiful. And it really is so filling. I thought it would be a great first recipe for our $10 or less series since it looks just absolutely stunning.
The Cost
Now, my rules for these $10 meals are pretty simple $10 before tax for all ingredients to make recipes (aside from a few staples that if you like to cook or cook often will most likely be in your kitchen) and you get at least 4 servings from these meals. Of course where you live prices may vary things may be cheaper or more expensive but I am going off of prices in New York. For this recipe I did my shopping at Trader Joe’s here is the cost breakdown:
- 1 Bag Spinach $1.99
- 1 Gold Potato $0.79 x 2 $1.58
- 1 bag Pizza Dough $1.49
- 1 Tub Vegan Cream Cheese $2.99
- 1 Head Garlic $0.49
- 1 Lemon $0.39
- Total: $8.93
For shaping the dough you will either need flour or olive oil (if you like to cook this is most likely in your kitchen). If you need to buy I would suggest buying flour as it is cheaper and a 32 ounce bag that is the Shop Rite brand is $1.76. I would also suggest adding salt and pepper to this, if you don’t already that have that you can buy a salt and pepper combo for around $1.25 to $2 depending on the store. If you need to buy those ingredients it will add on about $3.50. These are great staples to have in your kitchen and you will get many uses out of them.
Leftover Ingredients
From this recipe you will have leftover spinach, vegan cream cheese, lemon, and garlic. You can do a few things with these sides of course just use them individually in other dishes. If you want to sauté the spinach with lemon and garlic as a side for your pizza. You can also use it another time to make a spinach dip similar to the sauce we make for the pizza. You can also freeze the spinach if you like for putting in smoothies or soups.
The Potatoes
I prefer Gold potatoes because they are creamier and a little sweeter. I find they cook quicker and worked really well for our pizza. If a Russet potato works better for your budget you can definitely use it. However, you may need to microwave the potato before slicing it. For the slicing of the potatoes all you need is a knife. If you happen to have a mandoline you can use that (but please be careful). Honestly, mandolines scare me and I would much rather just cut with a sharp knife. Gold potatoes are softer so they are much easier to cut thinner, in my opinion. You want to cut the potatoes as thin as you possibly can.

- Can I use homemade dough? Of course! You can find a recipe for homemade dough here.
- How long does this last in the fridge? It will last up to 3 days.
- Can I freeze leftovers? Yes, you can.
- Best way to reheat? You can either microwave or pop in the oven.
- Can I substitute the spinach for a different green? Sure, you could use kale or broccoli or add arugula on top when it is done cooking. Just note that changing the veggie may alter the price.
- Can I substitute the vegan cream cheese? If you wanted to blend up firm or extra firm tofu with water that would probably make a good substitute.
- If I already have garlic powder can I substitute that? Definitely!

Pizza con Patate (Potato Pizza)
Ingredients
- 1 (16 ounce/454g) bag pizza dough
- 3 ouces (85) spinach chopped
- ½ (4 ounces/56g) tub vegan cream cheese
- ½ head of garlic (about .75 ounces/20g), chopped
- 2 Gold potatoes thinly sliced (about 18.5 ounces/530g)
- ½ lemon juiced
- 3 tablespoons (45ml olive oil), divided *see notes if you don't have oil
- Salt and pepper to taste
Instructions
- Preheat oven to 450°F (212°C).
- Add vegan cream cheese and water into a microwave safe bowl. Microwave for 30 to 45 seconds for vegan cream cheese to start melting. Mix together until smooth and creamy, you may need to microwave another 15 to 25 seconds.
- Finish preparing the sauce by adding in half of the chopped spinach, chopped garlic, and lemon juice. Mix together. If you are using salt and pepper you can add in a dash to this as well and add more to your taste. You can taste this as everything is cooked or a vegetable. Set it to the side.
- Using a sharp knife begin to thinly slice your potatoes. The thinner you can cut them the better and if you have pieces that don’t come out in full circles that is okay you can still layer them. Set the slices to the side.
- Spread the dough onto a baking sheet or pizza pan if you have one. If using oil add about a tablespoon of oil to the pan and roll the dough in it to help you spread it out. If using flour do the same. Spread the dough out to be as a thin and big as you want it to be. I opted for a circle pizza but you can make it square if you want.
- Bake in the oven for 5 minutes to help the crust start to cook.
- Remove from oven and add the chopped spinach that didn’t go into the sauce on top of the dough. You can save a little for garnish. Then add the sauce on top and spread it out. I didn’t add all the spinach because I was worried it would over power the sauce and just preferred to do it this way. Once the sauce is spread out start to layer the potatoes so they slightly overlap each other until all potatoes are added.
- If using oil you can drizzle 2 tablespoons of oil overtop the potatoes, if not skip this step. Then add some salt and pepper on top if you like.
- 9.Bake for 20 to 25 more minutes or until the potatoes are cooked and crispy.
- When done let the pizza sit for at least 10 minutes. Cut into 8 pieces (or more if you like) and enjoy.

Notes
- If you have or are using oil in this recipe you will use 1 tablespoon (15ml) on the pan you are baking the dough and use it to help you spread the dough out. Then you will drizzle the remaining 2 tablespoons (30ml) over the potatoes once they are on the dough. If you don’t have oil and decide to use flour that is fine it will still be delicious and you are skipping that step.
- Other oil than olive oil may be cheaper where you live, feel free to use any neutral oil you like.
- The potatoes need to be thinly sliced, if you are worried yours are not thin enough you may want to parboil the potatoes for a few minutes to start the cooking process. Just so they are soft but not mushy (think al dente potatoes).
- Feel free to add other seasonings you have or like.
