if you have never had tortellini in brodo, you have been missing out. it is a simple soup, so easy to make at home and perfect for chilly nights.
Tortellini in brodo is one of the easiest recipes you could probably make. You just need vegan tortellini (don’t worry we will get to that), vegetable broth, vegan parmesan, and black pepper. Seriously, that’s it. Enjoy it with a side salad or some tofu to round out the meal!
What Are Tortellini?
I grew up eating tortellini. We are Italian and they were one of my favorite stuffed pastas. If you don’t know what tortellini are they are a little round pasta shape that is filled with ricotta and other cheeses. In Italy (especially in Bologna and Modena) they would be adding pork, which of coursed we wouldn’t use as vegans. There are some varieties sold in the US that also have spinach. They almost are like thick rings because there can be a center depending on how thick it was made. If you want to learn more about tortellini, feel free to check out this website.
Where Can I Find Vegan Tortellini?
I will be honest vegan tortellini can be a little hard to find. There are a few brands that make them, Kite Hill is probably the biggest one. I also found this brand on Amazon but I haven’t tried it. However, you can also google “vegan tortellini” to see if anything else comes up as a shopping option in the area you live in. You can also make your own vegan tortellini. I have a recipe for them here. Now, making them is a bit time intensive BUT you can them freeze them and it makes them so easy to throw in a soup. If you can’t find and don’t want to make vegan tortellini you can swap it for vegan ravioli or gnocchi. While these are not traditional we have to work with what we can find sometimes!
Christmas and Tortellini in Brodo
Italians will usually enjoy Tortellini in Brodo for Christmas. This is due to the process of making homemade tortellini to being quite a labor of love. This recipe is a bit different since it is veganized and a little less homemade. Trust me though, it is delicious. - How long will this last in the fridge? Up to 3 days.
- Can I freeze this? Yes.
- How do I make this gluten free? You will need gluten free tortellini.
- Can I add other things to this? While I don’t want to tell you know traditionally it really is just the broth, tortellini, and cheese. I see a bunch of recipes adding all sorts of veggies and what not, it doesn’t need that. But of course in your kitchen you can do what you like.
- What vegan parmesan do you use? I like Violife for this because I can grate it.
- Where do you get the Kite Hill vegan tortellini from? I get it at Whole Foods but you can check their store locator on their website to see where it is available near you.

Tortellini in Brodo
Ingredients
- 1 (9 ounce/255g) package vegan cheese tortellini
- 3 cups (720ml) water
- 2 teaspoons (12g) vegetable base Better than Bouillon
- Vegan parmesan for topping
- Black pepper to taste
Instructions
- In a pot combine the water, Better than Bouillon, and a dash of black pepper. Cook over medium heat stirring until the Better than Bouillon has been dissolved.
- Bring to a boil and then pour in the tortellini. Cook for 5 minutes or until the tortellini float. Taste and add more black pepper if desired. If you feel you need salt you can add it as well.
- Divide the soup for as many servings as you like. Generously, grate with the vegan parmesan and add another pinch of black pepper. Enjoy.

- I like to use the Seasoned Vegetable Better than Bouillon, you can also use vegetable broth.
- Depending on how many people you are looking to feed you can get up to 4 smaller servings of this soup.
