An easy 7 ingredient dish that features all the good things about summer: corn, cucumbers, tomato and basil. Paired with some red wine vinegar the simplicity of this dish makes it so tasty.
We go to a restaurant and they have this salad on the menu, it is my favorite thing. Sometime I get 2 of them. I know it is simple but when all the ingredients are ripe and fresh it tastes incredible. It truly is the perfect summer salad in my opinion and just filled with so much flavor.
Corn Choice
For this salad you have two options for corn: frozen or fresh. I really wouldn’t suggest using a canned corn here unless you really have to, if you do drain and rinse it well. I love frozen for this because it is easy to just pop in the microwave or even let it thaw on your counter, especially on a hot day. If you want to go with fresh you can boil it and then shave the corn. It is your choice but if you are going for easier, go with the frozen.
Mini Persian Cucumbers
Here’s the thing I LOVE mini Persian cucumbers. They are a bit sweeter, crunchier, and you don’t have to peel them. The seeds inside are also minimal. They are pretty comparable to an English cucumber, so if you can’t find the minis just use the English cucumber. If you can’t find either of those and are just going to use a conventional cucumber (which is fine) then peel and deseed it. Since that skin is thicker and there are more seeds we don’t really want that in this salad.
Add On Ideas
While I feel this salad is completely perfect on its own you can always add more to it if you like. Feel free to try things like grilled tofu, tempeh, chopped parsley, beans, olives, quinoa, vegan feta – I mean really the possibilities are endless there are plenty of ways to customize this salad.

Corn, Cucumber, Tomato Salad
Ingredients
- 2 cups frozen corn thawed (270g)
- 20 cherry tomatoes about 165g, halved
- 4 Persian cucumbers about 350g, sliced
- 5 leaves basil chiffonnade
- 3 tablespoons red wine vinegar
- 1 tablespoons light olive oil
- Flaky salt to taste
Instructions
- In a bowl combine all prepped ingredients.
- Toss to mix.
- Garnish with extra basil and flaky sea salt if desired.
