Air fried refried bean & veggie flautas are the best way to start off 2022. A healthy and delicious recipe, they sure to be a hit with you and anyone you share them with! They are easy to make and so scrumptious.
I know this is the time of year when a lot of people want to get back into maybe eating a little bit lighter and healthier. Over the last two years I have lost 45 pounds and the one thing I have learned is make yummy food that is still nutritious but full of flavor. This recipe does that just that! I like to think of it as healthy, nourishing comfort food. These are air fried, which if you have been here you know I love, instead of deep fried. They are filled with refried beans, veggies, and the homemade adobo cashew dip has only 5 ingredients! My non-vegan sister absolutely loved these and I know you will too.
Flautas or Taquitos?
Okay, so I am not claiming anything about this recipe is authentic Mexican food. I have seen a lot of conflicting information online about what actually makes a flauta vs a taquito. The one thing I have seen is that flautas are typically longer in shape and use larger tortillas, like one you would use for a burrito. Hence, why I am calling these mini flautas because I used smaller tortillas. The other thing I saw a lot was that flautas are made with flour tortillas. Taquitos are actually usually a similar size to these but they are typically made with corn tortillas. They are similar in the sense that they are both rolled up and typically filled with meat (not in our case though) but the difference seems to be in the tortilla. I would love to learn more so if you have any knowledge on this leave a comment down below! I went with calling them flautas because I am using a flour tortilla here.
The Dip
I am all about a good dip. It elevates a dish and adds so much more to something. This adobo cashew dip is only 5 ingredients 3 of which are just seasonings. In case you don’t know what adobo seasoning is, it just a blend of spices. Usually it has chili powder, turmeric, cumin, onion powder, garlic powder and some other things so it is a great way to add a lot of flavor. If you can’t find or don’t want to buy another spice/seasoning you can always just taco seasoning or just add some chili powder, garlic, and onion powder to the sauce.
If you have a nut allergy my go to substitute is usually white beans. I like them because they are creamy. I also think tahini could work well here. If using beans I would substitute in equal amounts and you may need to add more non-dairy milk or water to get it to a dip consistency. If using tahini I would suggest about 2 tablespoons and adjusting liquid as necessary.
Gluten Free
If you want these to be gluten free just simply swap the tortillas! You can use corn tortillas but there are a lot of options out there. Everything else in this recipe would be gluten free friendly so you have nothing to worry about there.
Beans, Beans
When buying refried beans you must check the label. Unfortunately, some contain lard which we definitely do not want. The Trader Joe’s refried beans are my favorite. They only have 3 ingredients: beans, salt, and water. These refried beans from Whole Foods are also very good but have a few more things in it. You can also make your own refried beans at home so it really just comes down to preference.

Mini Air Fried Refried Bean & Veggie Flautas
Ingredients
Flautas
- 1 jalapeño chopped (about 1 ounce/30g)
- ½ zucchini chopped (about 2 ounces/60g)
- 1 large clove garlic chopped (about .5 ounces/10g)
- ⅓ sweet onion chopped (about 2 ounces/60g)
- ½ cup (60g) frozen or fresh corn
- 1 cup (260g) vegan refried beans
- 1 teaspoon adobo seaesoning
- 10 mini street taco style tortillas
- Spray oil
- ¼ teaspoon chili powder
- Salt & pepper
Adobo Cashew Dip
- ¼ cup (30g) cashews, boiled or soaked overnight
- ½ cup (120ml) nondairy milk, unsweetened and unflavored
- ⅛ teaspoon salt or to taste
- ½ teaspoon adobo seasoning
- 1 teaspoon nutritional yeast
Other
- parsley or cilantro for garnish
- 2-3 green onion chopped, for garnish
Instructions
- Boil cashews for 30 minutes or soak overnight prior to starting this recipe.
- In a large pan coat with spray oil (or use 1 teaspoon of olive oil) and add in the chopped jalapeño, zucchini, garlic, onion, and frozen corn. Add salt and pepper and saute over medium heat for 5 minutes until the onions and garlic are fragrant.
- Meanwhile, in a medium bowl combine the refried beans and adobo seasoning.
- Take one tortilla and place about 2 large spoonfuls of the refried beans on top. Spread it around with the back of spoon and then place about 2 to 3 small spoonfuls of the vegetables. Roll it up tightly and set to the side. Repeat until all are made.
- Spray them with spray oil and then top with the chili powder.
- Place in the air fryer basket and air fry at 375°F (190°C) for 13 minutes or until crispy.
- Meanwhile, in a blender combine the cashews and seasonings for the sauce. Blend until smooth. Taste and add more salt if desired.
- Once the flatuas are done, add to a plate with the dip and the parsley and green onion.

Notes
- All air fryers cook differently adjust accordingly to your air fryer.
- These can be baked, I would suggest starting at 375°F (190°C) for 15 minutes and going from there.
- These can be deep fried, place into oil and fry for about 3 to 5 minutes until crispy and golden.
- To freeze after making: place in the freezer and freeze for 1 hour, once they have hardened place in a storage container. To reheat simply place in oven or air fryer.
- Lasts up to 3 days in the fridge, but they will soften as they sit there.
