colorful vegan deviled eggs are the perfect way to say hello to spring! dyed with natural ingredients they are fun and delicious.

the inspiration
Last year I created a Vegan Deviled Egg recipe. It was a lot of fun to make and honestly I was so happy with how they turned out. They look so pretty and are very reminiscent, of me, to a deviled egg.
So, this year I wanted to do some fun recipes for Easter and spring. I thought about how many times I had seen beautifully pickled eggs or dyed eggs. Well, I knew I could make ones that were also colorful and pretty.
Using natural ingredients (spinach and beets) I was able to make some pretty colorful deviled eggs. These are so beautiful and honestly not even hard to make. They will wow all your guests! So, let’s make some colorful vegan deviled eggs.

the ingredients
- Agar Powder: the agar powder is a very important ingredient. If you have been around the blog you will see we use it quite a bit when making alternatives. It acts like a vegan gelatine. So, it helps to set the “egg white” and give it a firm but still soft texture. You can find it at most health food stores, Asian markets, or just order it online.
- Vegan Yogurt: we will use this in the vegan egg white just to add a bit of opaqueness to the egg white. So, it doesn’t set like a clear jelly.
- Non-Dairy Milk: we will also use this in the vegan egg white, for the same reason above, and to help blend everything up.
- Spinach: to make our green vegan egg whites we will just use some spinach!
- Beets or Beet Juice: to make our pink vegan egg whites we need the juice from either a package of beets or just some beet juice.
- Yukon Gold Potato: we will use this to create the filling for the vegan deviled egg.
- Vegan Mayo: we will mix this with the mashed potato to make it creamy.
- Seasonings: we need to season our filling for the vegan deviled egg. I use turmeric (for color), salt, black pepper, nutritional yeast, garlic powder, and onion powder.
what is agar powder?
The mystery ingredient here if you are unfamiliar with a little food science will be agar or agar agar powder. Agar powder is very very interesting. It basically works as a vegan gelatin! It’s derived from red seaweed.
It is a pale colored powder, that is tasteless and odorless. When combined with water it will create a gel texture and when cooled it will set into a firm texture. Agar powder is also great for using in desserts, vegan cheese making, and so many other things!
Unfortunately, there is no replacement for agar powder. I tried many different things (cornstarch, potato starch, tapioca starch, egg replacer) but nothing worked as beautifully as the agar powder did.
You are able to find it online of course, but you should also be able to get it health food stores, Asian markets, and maybe even larger food stores. I did find mind at a local health/organic store. It ranges in price from $5 to $7. While it isn’t an ingredient every household may have it is a great one to have.

how to make the vegan egg white
To make our vegan egg whites is very simple! In a blender you will combine the non-dairy milk, non-dairy yogurt, agar powder, water, a little salt, and whatever you are using to create the color. So, that will either be spinach or beet juice.
Blend it up for 30 seconds or until everything is well combined and the liquid is smooth. Then, you will transfer it into a pot and cook it on the stove. Whisk continuously for about 5-7 minutes.
If this is your first time working with agar powder you can cook it for a little longer to ensure it is fully cooked. So, you don’t have any issues.
Then, you will just pour the liquid into an egg mold. You will then transfer it into the fridge and let it cool for 1 hour. It should then be set and firm.

the filling
For the filling you need a Yukon gold potato. To replicate a the typical yolk filled filling mashed potatoes make a great substitute. When paired with a few seasonings to help like turmeric for color, nutritional yeast for umami, and some vegan mayo for creaminess it works out perfectly!
You can also add in mustard (I am not a fan so I left it out) and you can always add in extra vegan mayo or vegan yogurt to make the filling even creamier. It is a fun and easy way to replicate the yolk filling.
Just trust me it really works well here to mimic that texture of an egg yolk!
piping the filling
When it comes time to the pipe the little filling on top I like to do this with a Star Piping Tip & Piping Bag. If you are someone who likes to decorate cakes you may already have this in your house. However, if not you can order them online or get them at Michael’s.
These are great to have on hand and can take something from looking ordinary to stellar. You add the yolky-filling to it and pipe it on top. It will look so beautiful. Otherwise, you can just snip the corner off of a plastic ziploc bag and make large dollops of the yolky-filling.
I personally do not scoop out a little circle of the egg white. I find it to be wasteful. However, if you would rather do that you totally can to make it more like an egg.

After they are all piped out, it is time to assemble them on a pretty plate, and decorate! You can keep it simple with some chives, paprika, salt, and pepper. This is what I did.
However, I did have some images saved as inspiration that had some very gorgeous toppings. Little pieces of flowers, sprigs of dill. So, really have fun and get creative. There are a lot of ways to make these a show-stopping dish.
making other colors
If you want to try and make some other colors here are some ideas!
- Use turmeric to make them yellow.
- Use spirulina to make them blue.
- Use carrot juice to make them orange.
- Use the liquid from purple cabbage to make an indigo.
- Use blended and strained pitaya or pitaya powder for a vibrant pink.
They also sell natural food dyes that are liquid but made from plants. So, you can always add in a few drops of those as well.
what if i don’t want to make homemade vegan egg whites?
While I encourage you to make the homemade vegan egg whites because it is fun, I understand it may not be something everyone wants to try. Another thing you can do is boil baby potatoes as the base. It offers a great alternative and is so fun.
There are plenty of options here. Both are fun and will come out beautiful. However, you can’t really create colors with that as well.

why you’ll love these colorful vegan deviled eggs
This recipe is great for anyone! You don’t have to be vegan to enjoy it. You can just be looking to try some vegan substitutes or eating less eggs. Maybe you just want to try out some food science fun.
It is a great recipe to involve older kids with as well. I think it is a fun one you need to try! The colors are so pretty. You will be amazed at how gorgeous and tasty they are!
Now, you may be wondering how they taste? The flavor on them is mostly coming from the filling and garnish. The vegan white base is pretty bland as a normal egg white is. If you are looking for a very eggy flavor you can add some kala namak on top as well.

- Why don’t use you black salt (kala namak)? I personally do not like it but if you want to add it you can.
- What should I serve this with? I think it would be so fun to make these for a tea party or a brunch!
- Can I replace the agar powder? No, please see the section above on agar powder.

Colorful Vegan Deviled Eggs
Equipment
Ingredients
Spinach Base
- ⅓ teaspoon agar powder
- ⅓ cup +2 tablespoons water
- 1 ½ tablespoons non-dairy milk unsweetened and unflavored
- 1 tablespoons vegan yogurt
- ⅛ teaspoon salt
- ¼ cup spinach
Beet Base
- ⅓ teaspoon agar powder
- ⅓ cup +2 tablespoons water
- 1 ½ tablespoons non-dairy milk unsweetened and unflavored
- 1 tablespoons vegan yogurt
- ⅛ teaspoon salt
- 2 tablespoons beet juice
Deviled Egg Filling
- 3 small Yukon gold potatoes or 1 large one about 15.5 ounces, peeled and chopped
- ½ tablespoon nutritional yeast
- ¼ teaspoon salt
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ⅛ teaspoon ground turmeric
- 1 tablespoon vegan mayonnaise
Instructions
- Prepare the “egg white” bases. Add all the spinach ingredients into a blender and blend for 30 seconds to 1 minute until smooth and the spinach is broken down. Pour into a small pot. Bring to a boil over medium high heat and stir continuously for 5 minutes. ell incorporated. *To test if the agar powder is fully dissolved you can touch it with your finger and it should feel like a smooth gel.
- Pour the liquid into the egg shape mold. Refrigerate for at least 1 hour or until ready to use. If there are any bubbles you can pop them or if they don’t bother you, you can just leave them.
- Repeat the process with the beet “egg white” base.
- While the egg whites solidify work on the filing. Place the potatoes into a small pot with enough water to cover it. Cook the potatoes for 40 minutes over low heat. If the water starts to boil off too quickly add more in. Boil until the potatoes are extremely soft. I left the small potatoes whole and just let them boil. However, you can cut it into pieces if you like.
- Drain out any remaining water. Add in the seasonings and mash with the back of a spoon and then a spatula to make it extra smooth. If you have a potato ricer you can use that as well. Then add in the vegan mayonnaise and mix together to make it light and fluffy. Taste and add anymore seasonings if desired.
- Transfer into a piping bag with a star tip.
- Remove the vegan egg whites from egg mold.
- Pipe the yolky filling on top in a swirl. Then sprinkle paprika and any greens over top. You can also add black pepper or salt if you like. Enjoy.
