these chocolate chip cookies are only 6 ingredients, vegan, gluten free, and made with silken tofu!

the inspiration
I know what you are thinking, “vegan and gluten free cookies made with tofu, this has to be a joke…” But I am so delighted to tell you these are absolutely delicious. I like trying to find different ways to use tofu in my daily life and especially in desserts.
Silken tofu is a tofu firmness I don’t use a lot of personally. So, I want to find more ways to incorporate it. I was thinking about how it would probably work really well in a cookie.
After 2 rounds of testing I got something I liked! I also decided to keep it gluten free (and nut free) for my friends here who have allergies. Trust me you will never guess there is tofu in these cookies.

the ingredients
- Silken Tofu: of course the star of our show is silken tofu! It has come to my recent attention that for some people there is firm silken tofu and soft silken tofu. So, if you are one of those people I would say go for soft silken tofu (40 calories and 4g per 85g/3 ounce serving are the macros you are looking for). Otherwise, just some good old silken tofu is all you need!
- Oat Flour: I have been enjoying using the Oatsome Oat Flour Blend. I find it to be a great 1:1 substitute and it works really well in baking.
- Organic Brown Sugar: we will add in some sweetness with organic brown sugar.
- Vanilla Extract: it is a cookie recipe so of course we need vanilla extract.
- Baking Powder: these will help to give our cookies some rise.
- Vegan Chocolate Chips: I like to use the Enjoy Life Mini Chocolate Chips but you can use any vegan chocolate chips you like. You can also use dark chocolate, vegan white chocolate.

what is silken tofu?
If you are unfamiliar with silken tofu, let’s talk about it. Silken tofu is a super soft, smooth type of tofu with a texture kind of like pudding or custard. It’s made without pressing out the water, so it stays delicate and creamy.
It works really here because it helps to replace egg in a traditional cookie so it really binds everything together. It will also a little extra protein and we do not need to use any butter or oil! I promise this is going to make one tasty cookie.

- Blend the silken tofu for about 30 seconds to 1 minute until it is creamy and smooth. It will be a liquid.

- Add in the vanilla extract, organic brown sugar, baking powder, and oat flour. Mix until a dough is formed.

- Add in the vegan chocolate chips.

- Fold in the vegan chocolate chips. Chill the dough for at least 15 minutes.

- Use a cookie or ice cream scoop to scoop out the dough. You will get about 15 cookies.

- Spray the back of a spoon with non-stick spray and press the cookies down to flatten them. They don’t spread that well so if you don’t do this they will stay like balls.

- Bake at 375°F for 15 minutes on a parchment or silicone mat lined baking sheet. When the cookies come out of the oven and are still hot place a few extra chocolate chips on top of each of the cookies. Enjoy.
what else can I add to these cookies?
The fun part of this recipe is you can use any mix-ins or add ins you like. You can do some nuts like walnuts or pecans. This would also be fun to add in things like dates, a chopped up vegan candy bar, or dried fruit.
If you want to go a salty route you can do crushed up pretzels or potato chips. Have fun with these tofu chocolate chip cookies and get creative.

Is this recipe allergy friendly?
It does use soy but otherwise the recipe is nut and gluten free.
How do I store them?
Store them in a container on the counter for up to 1 week. You can also freeze them for as long as you like.
What is the texture like?
The texture of these cookies is slightly different than regular cookies. However, that is more-so due to the oat flour rather than the tofu. They somewhat remind me of a muffin a bit as they are slightly bouncy.
Can I use all purpose flour?
While I didn’t try the recipe with it I do think it would work fine. I would follow the recipe as is.
The dough is sticky, am I doing something wrong?
It is a stickier dough. If you are struggling with immensely you can always add in 1 to 2 tablespoons more of flour. Chilling it will also help it to be less sticky.

Tofu Chocolate Chip Cookies
Equipment
- Silicone Mat or parchment paper
- Cookie Scoop or ice cream scoop
Ingredients
- ½ block silken tofu
- 1 ¼ cup oat flour
- ⅓ cup + 2 teaspoons organic brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 2 tablespoons + 2 teaspoons mini vegan chocolate chips or any chocolate you like
Instructions
- Preheat oven to 375°F (190°C).
- Blend the silken tofu for about 30 seconds to 1 minute until it is creamy and smooth. It will be a liquid. Pour into a medium-sized bowl.
- Add in the vanilla extract, organic brown sugar, baking powder, and oat flour. Mix until a dough is formed.
- Add in 2 tablespoons of the vegan chocolate chips.
- Fold in the vegan chocolate chips. Chill the dough in the fridge for at least 15 minutes.
- Use a cookie or ice cream scoop to scoop out the dough (about 2 tablespoons). You will get about 15 cookies. Place onto the baking sheet in a ball.
- Spray the back of a spoon with non-stick spray or wet with water, and press the cookies down to flatten them. They don’t spread that well so if you don’t do this they will stay like balls. You can wipe the spoon off in between if the dough is getting stuck.
- Bake for 15 minutes on a parchment or silicone mat lined baking sheet.
- When the cookies come out of the oven and are still hot, you can use the remaining vegan chocolate chips to place a few extra chocolate chips on top of each of the cookies. This helps to make them look better. Enjoy.

Hi, while I am definitely a super firm tofu lover I don’t think it will work here. If you want to use a firm that could be a decent substitute but the super firm tofu is just going to be too firm.
