it is time to use that delicious sweet summer corn! do something fun with it and make sweet corn pizza. so easy to make and packed with incredible flavor.
If you haven’t put corn on your pizza before you are missing out. While there is Pizza Mimosa, corn is definitely not the most popular topping for pizza . This sweet corn pizza is completely vegan and has a corn sauce, vegan cheese. fresh corn, scallions, basil, ground pistachios, and vegan hot honey. All the flavors work so well here to play off that sweet summer corn.
Fresh or Frozen Corn?
Since we are in peak corn season I had to use delicious fresh corn. If you find this recipe at another point in the year, you can always use frozen sweet corn. I also love the fresh corn for this so you can get those yummy little corn sections from cutting it fresh off the cob.
Corn Sauce
The corn sauce truly makes this pizza. It only requires 3 ingredients the fresh cooked corn, nondairy milk, and salt. Blend it up and it is so delicious. At first I thought the idea was going to be weird but I honestly loved it so much. It really amplifies the corn flavor and it gives something delicious for the vegan cheese to melt into.
Homemade Crust Vs Store-Bought Crust
For making this a quick and speedy process I went with store-bought crust for the recipe. However, if you want to make homemade crust it will of course be delicious. I have a vegan pizza recipe here for you with homemade dough. There are a few options when it comes to using store-bought dough – the best is to go to your local pizzeria and ask them for dough. However, I also like the dough from Whole Foods and Trader Joe’s (which was what I used in the pictures).
Pistachio Crumbs
When I was thinking about the flavors of this pizza I wanted a fun topping. While I could have easily opted for vegan parmesan, pistachios were speaking to me. These ground up pistachios are perfect because they are a little sweet, a little salty, and add a nice little texture. You will also have leftover pistachios so you can use them to top other things or as a breading.

- How long do leftovers last? Up to 3 days in the fridge or you can freeze them. Reheat in either the microwave, oven, or air fryer.
- Is this recipe soy free? Yes.
- Is this recipe gluten free? As long as you use gluten free pizza dough.
- Is this recipe nut free? Just omit the pistachio crumbs.
- What else could I add to this? I truly think it is perfect as is. However, if you feel you want to add some other things to to it – pickled jalapeños, hatch chiles, or some vegan pesto.

Sweet Corn Pizza
Ingredients
- 4 pieces corn on the cob (about 1 lb 4 ounces/567g)
- 1 tablespoon (15ml) maple syrup
- ¼ teaspoon red pepper flakes or to spiciness preference
- 3 tablespoons (45ml) nondairy milk, unsweetened and unflavored
- ¼ cup (30g )shelled pistachios
- 1 (16 ounce/454g) pizza dough
- 1 tablespoon (15ml) olive oil
- 1 cup (112g) vegan mozzarella shreds
- 1 cup (112g) vegan Mexican style shreds
- 1 green onion thinly sliced, for garnish
- 10 leaves basil for garnish
Instructions
- Preheat oven to 425°F (218°C).
- In a pot boil the corn for 10 minutes or until bright yellow.
- In a food processor or blender pulse the pistachios until they form a crumb consistency.
- Prepare the hot vegan honey by mixing the maple syrup with the red pepper flakes.
- Once the corn is done cooking allow it to cool for a few minutes. Cut the corn off of two of the cobs and place in a blender along with the non-dairy milk and a pinch of salt. Blend until smooth.
- Oil your pan and add the pizza dough. Use your hands to spread it out and then bake for 5 minutes. If you want to put it over parchment paper to ensure it doesn’t stick you can.
- Cut the corn off of the other two cobs.
- Pour the sauce over the dough. Then layer the vegan cheeses and corn. Bake for another 15 to 20 minutes or until golden and crisp.
- Once the pizza is done top with some of the pistachio crumbs, drizzle over the hot vegan honey, and add the scallions and basil. Allow to cool for a few minutes before cutting and enjoy.

- If you can’t find vegan Mexican style shreds you can use cheddar or just all mozzarella.
