with summer kicking off it is a great time to be making some vegan coleslaw! these easy vegan coleslaw is yummy and refreshing. instead of using vegan mayo we use hummus to make it creamy.
Coleslaw is a classic side dish that is definitely a summer staple. It pairs perfectly with the dishes you find at barbecues and offers a light refreshing side dish. I keep this recipe very simple by using bagged cabbage/veggie slaw mix and using hummus! The hummus adds creaminess without having to use vegan mayo.
the ingredients
- Veggie Slaw/Cabbage Slaw: most food stores will have a bagged mix of a veggie slaw or cabbage slaw. I like to find the ones with have some carrots in it!
- Hummus: you just need regular hummus but you can play around with using flavored hummus as well.
- Grade A Maple Syrup: typically coleslaw uses a little bit of sugar so I opted for using maple syrup but you can use agave or cane sugar as well.
- Apple Cider Vinegar: this adds tang and acidity to the coleslaw. It also helps to break down the cabbage. You can use white vinegar in its place.
- Salt/Pepper: seasonings for flavor.
- Water: to help thin the dressing for the coleslaw.
why hummus?
Why not?! In all honesty I am not a big fan of vegan mayo. I wanted to keep the coleslaw still creamy and I figured why not use hummus! It is delicious, sneaks in a big of plant protein from the chickpeas, and keeps this recipe allergy friendly with no use of nuts. There are a wide variety of brands of hummus making it easy to find one you like. However, if you would like to use vegan mayo here of course you can totally do that.

The vegan coleslaw is the perfect side dish because it is light and refreshing compared to some potentially heavier side dishes. Easy Vegan Coleslaw
Ingredients
- 12 ounces cabbage slaw
- ½ cup hummus
- 1 tablespoon apple cider vinegar
- 1 tablespoon grade-A maple syrup
- ¼ teaspoon black pepper
- ½ teaspoon salt
- 3 tablespoons water
Instructions
- In a bowl whisk together all the ingredients except the cabbage. Whisk until a thick liquid has formed.
- Pour over the cabbage slaw blend.
- Toss to coat. Taste and add any additional seasonings to your preference.
- Chill in the fridge for at least 30 minutes or until ready to eat.
