this vegan baked brie is such a fun recipe! it is only 4 ingredients, quick to make, and delicious.
the inspiration
My family isn’t vegan and my mom really loves making baked brie. Whenever I watch her make it, it is so easy and everyone always loves it. So, it got me to thinking I need to make a vegan version.
This vegan baked brie recipe actually uses cream cheese in place of brie! I know, I guess I should be calling it vegan baked cream cheese? However, the vegan cream cheese works really well here, is much easier to find, and is still delicious.
So, if you got a few people coming over or just want to add another appetizer to a party or the holidays make this recipe!
the ingredients
- Vegan Cream Cheese: while there are a few companies that are making vegan brie I am sadly unable to find then where I live. Also, because I wanted this recipe to be easy I wanted a store-bought product that would work well. So, I figured vegan cream cheese would be great in this recipe. I like to use Kite Hill.
- Puff Pastry: we will wrap the vegan cream cheese in puff pastry. It puffs up beautifully and creates that gorgeous golden crust!
- Pecans: these are a fun topping in the vegan baked brie that add texture.
- Organic Brown Sugar: this adds a little bit of sweetness to the whole dish that is just divine.
this recipe is so easy!
I promise you will love how easy this recipe is. It is very low effort and high reward. First, all you need to do is thaw the puff pastry for about 40 minutes. You do want it to still be cold but you should be able to easily fold it.
Then, you will scoop out the vegan cream cheese and place it on the thawed puff pastry. The vegan cream cheese should be very easy to scoop out.

Once you have the vegan cream cheese on the puff pastry all you need to do is add on some toppings! I opted for a sweeter version because I think it pairs well with the creaminess and saltiness of the vegan cream cheese. It also compliments the sweetness in puff pastry.
All you need to do is chop up some pecans and place them on top with organic brown sugar. Also, don’t worry if any fall to the side because when you fold up the puff pastry it will all be in there.
You can leave the pecans whole if you like but I find chopping them up makes it easier for adding them on top and eating.

While I do really enjoy the pecans and brown sugar there are so many fun ways you can make this, so here are some more ideas:
- Spread fig jam over top
- Pistachios
- Rosemary
- Any jam you like
- Savory with olives
- Tomatoes
- Use a herb or chive vegan cream cheese
- Cranberries
So, go crazy and add what you like!
folding up the puff pastry
When it comes to folding up the puff pastry for the vegan baked brie it should be very easy. I love puff pastry because it is easy to work with. You don’t need to worry too much about it cracking or ripping as long as it is thawed.
So, just fold it up and over the vegan cream cheese. Making sure to really wrap it up so you don’t risk anything spilling or cooking out.
I also like to take a little water on my finger and just lightly wet the puff pastry on that top seal so it definitely sticks. The top may lift and pop open slightly during baking but I don’t want it to open up too much.

Now, it is time to bake! You just pop it in the oven for about 30 to 40 minutes. Everyone’s ovens work differently which I cannot emphasize enough!
Also, if you want it to be a bit more golden you can bake it for longer. I found 35 minutes was perfect for my oven and my preferences. I love how easy it is to have this beautiful recipe come together because the oven does all the work.
While it is baking the sugar will melt and the puff pastry and vegan cream cheese will fuse and meld together. The puff pastry it just delightful as well.
what to serve it with
The fun part of this is serving the recipe! There are so many ways to make this look beautiful. I went with some apples, crackers, and a little raspberry jam. I also like to add in some rosemary around for a garnish
You can truly serve this with anything you like and of course the puff pastry is there to help us eat all of this as well. There are so many ways to enjoy this recipe and I think it is just a gorgeous little appetizer.

I think you will really love how easy this vegan baked brie is to make. Aside from waiting for the thaw time and the baking it comes together so quickly. There is very minimal work you need to do which is nice.
It is a great recipe to just put out there if you are having some last minute company or want to bring something to a party. Everyone is going to love it.

- Is this recipe nut free? No.
- Is this recipe gluten free? No.
- Is this recipe soy free? It would be important to check all the ingredients but there is no use of tofu or any direct soy ingredient.
- Can I make this recipe ahead of time? I think if you wanted to wrap the vegan cream cheese up and set in the fridge for 2 to 3 hours before baking it would probably be okay.
- Can I keep the leftovers? Sure, just pop them in the fridge and then you can warm it back up in the oven or microwave.
- What puff pastry are you using? Pepperidge farm is accidentally vegan! Just be sure to check the ingredients on whatever you are using.

Vegan Baked Brie
Ingredients
- 1 (around 8.5 ounces) sheet thawed but still cold puff pastry
- 1 (8 ounce) vegan cream cheese
- 1 tablespoon organic brown sugar
- ⅛ cup pecans chopped
Instructions
- Thaw puff pastry for 40 minutes prior to making recipe.
- Preheat oven to 400°F (204°C).
- Open the sheet up puff pastry up and use your fingers to lightly press and spread slightly.
- Add in the vegan cream cheese into the center of the puff pastry. Then sprinkle on the brown sugar and pecans.
- Fold the puff pastry up and over the vegan cream cheese. Secure it tightly and if you would like to you can take a little water and run it under and folds that may be popping up to help them stick.
- Bake in the oven for 30 to 40 minutes until golden and crispy.
- Serve with any fruits, crackers, bread or anything else you like. Enjoy.
