This is my favorite kind of meal. I could eat this every single day. Tofu, noodles, broccoli it is always a winning combination. I used the Right Foods Teriyaki Noodles to help make this bowl come together really quickly. It is easy to customize with whatever you like you can always swap the tofu for tempeh or seitan and use whatever vegetable you like.
I have been working with Right Foods for a very long time. It makes me so happy to work with a company who cares about health and the environment. Their products are all made with sustainable packaging which is so lovely. It is also very minimal packaging which I really like. Their products are all whole food plant based, no oil, no processed ingredients, nothing weird is inside of them. They are very healthy and great to eat on their own or use as a base for a meal. You can find them all over at Whole Foods, Sprouts, Kroger, Publix, Safeway, Wegman’s and more!
This bowl is really easy to make and comes together to make a quick dinner or lunch. Using the flavor packet from the noodles helps to make a delicious Teriyaki sauce without all the crazy ingredients from some other food store ones. If you are soy free you can always swap the tofu for cauliflower, seitan or chickpeas. Either way it will be delicious. I also love pairing it with broccoli but edamame would be good here or string beans.
INGREDIENTS
1 tsp sesame oil
2 tbsp cornstarch, divided
1 tbsp maple syrup
¼ tsp red pepper flakes (optional)
1 tsp sesame seeds
½ cup broccoli
METHOD
- Add noodles to a boiling pot of water cook until soft.
- Add seasoning packet into bowl along with 1 tbsp cornstarch, maple syrup, sesame seeds, red pepper flakes and water. Mix together. Place in a pot and bring to a boil to thicken.
- In a large pan add the sesame oil. Cut tofu into cubes, place them int the pan. Add the cornstarch and mix to coat the tofu. Cook until golden and crispy.
- Steam broccoli for 5 minutes.
- When ready coat the tofu in about ¾ of the sauce and use the other ¼ for the noodles.
- Place everything in a bowl garnish with more red pepper flakes, green onion and a drizzle of extra sauce.
